Star Struck

Yesterday was a pretty amazing day! It started with a killer speed session with speed demon Ashley before Physical Therapy, some super twitchy needling (this part was not awesome, but I was suuuuper tight today, so obviously it was necessary), and then I met up with this amazing lady.

Susan has run multiple times in the Olympic trials, and she runs something ridiculous like a 2:42 marathon! You know, about the amount of time it takes me to run half that. As soon as she told me that, I felt like I was talking to Bernadette Peters. What? You’re not musical theatre obsessed like me and that means nothing to you? Okay, I felt like I was talking to Meryl Streep! You want to know what else??? She didn’t start running until she was 36 years old! And she ran her first marathon in about 4 hours. Talk about freaking inspiration!

Turns out she’s kind of like a running celebrity here in Phoenix! She also happens to be my coach for the New York City Marathon!! And now if she reads this she will think I’m a crazy stalker and probably disown me. I knew when I made this commitment that I had made the right choice, and I was super excited, but after talking to Susan yesterday, I realize just how amazing this organization is, and how lucky I am to be working with such an incredible coach on my first full marathon.

She also explained a little bit more about what Chances for Children does, and how my fundraising will offer physical education and fitness opportunities to kids who can’t even afford to buy shoes. There are several events that I have the opportunity to be a part of and see exactly where this money is going, and I cannot wait to get more involved!

Firefly Run 5K Race Recap

Saturday evening I had the opportunity to participate in my first night race!

Heather, Emily, Nicole, Me, Bethany & Jason

Decked out in glow gear. We take night racing very seriously.

Steve, Jason, Bethany and I arrived pretty early so that Jason could register. We quickly met up with Nicole, Emily and Stacey, and hung out for a bit before lining up for the race.

Jason, Bethany and I started towards the back. It was Bethany’s first race, and we had all three planned to run it together. Usually, I’m a big jerk and I ditch my friends at races (or if I race with Nicole, I tell her to just leave me because I will never make it at her pace haha), but I really wanted to run Bethany’s first race with her, and I was excited about the idea of running with my two best friends.

When we started running, I was amazed at how nice it was to be able to look around and enjoy my surroundings. The only thing I usually see during the race is the face of little Garmi. And she’s cute, but Phoenix at night kind of is too. The weather was perfect, and it just felt amazing to be running through the city at night!

The race was an out and back route, so shortly after mile 1, we saw Nicole and Stacey racing back. We all shouted and waved at each other. I was ridiculously energetic, and I kept trying to talk to Jason and Bethany, but they were not feeling as chatty as me haha. Emily and Heather were pretty close to us for the majority of the race as well.

At mile 2, I could tell Bethany was getting tired, but she turned it up a little bit and surprised Jason and me. I started thinking at that point

10 years ago, who would have thought that we would be here?

10 years ago I was near the end of my “first round” of weight loss. I was ridiculously unhealthy, and in a very bad place in my life. We had all been through an impossibly tough and life changing situation together, and the three of us were doing the best we could to get by. Sometimes I can’t believe we’ve made it to this point in our lives–not running a 5k, but maintained our friendship through thick and thin, grown and changed so much as human beings, and found even deeper love and appreciation of our friendships.

I began to get a little lot sentimental, and started to wish that our whole group could be together, but mostly, I was just happy to have these 2 amazing friends in my life, and to be accomplishing goals together. We’ve always been really different. Neither of them are into theatre, and we’re all just really different, so it was awesome to be going after something together.

Bethany kicked some serious ass, didn’t stop once, and ran the fastest she’s run in this stage of her life. I couldn’t be more proud of her!

Before we finished, Steve caught Stacey busting through the finish line with a rockin’ PR!!

Then at the very end, Jason picked it up a little and finished a few seconds before Bethany and me.

So serious!

Shortly after, Bethany rocked it out and pulled out a sub 9 pace for the last stretch. I finished with the biggest grin on my face.

Running is fun!!

WHEEEEE!!! I love running!!!! Usually at the end of a race I hate running. This was a pleasant change 😉

After the race,  we headed over to Papago Brewing Company for food and drinks, where we met up with Nacho.

And Miriam and Scott who were visiting from Indiana.

Jason and Nacho had been to Papago Brewing Company before, finding it after we had all been huge fans of their brews at various other restaurants. The beer selection was ridiculous, and the food was incredible! Almost everyone ordered pizza.

Everything I tasted was delicious, and I absolutely loved the atmosphere of this place! I was worried it was going to be a little stuffy since it’s in Scottsdale, but it was definitely beer people atmosphere if that makes sense. I absolutely loved it and will definitely be back in the future!

Final funny note: I mentioned to Steve that he didn’t get a single picture of Nicole after the race began and he commented “She ran by so fast at the end, the camera couldn’t focus on her!” Nice job, Speedy Gonzales. 😉

Cake Batter Dip

Rich, creamy cake batter dip is so easy to make and a lot healthier than you’d expect!

I’ve seen this versions of delicious dip all over the internet and I knew I wanted to try it out myself.

I knew that my future sister in law’s bridal shower was the perfect opportunity! This stuff was the hit of the shower, let me tell you!

So simple, so easy, so delicious, and so not as unhealthy as it sounds! Some of the guests thought it tasted like frosting. I thought it tasted like after you put your batter in the baking pan and you stick your whole face in your mixing bowl and lick it clean. You do that too, right??? Or now you think I’m a freak and you promptly clicked the little x on this tab and made a mental note to never return. That’s okay, if you don’t lick the bowl, I’m not sure we can be friends.

This dip requires three ingredients, and about as many minutes. It’s crazy that something so delicious can be so easy! My favorite moment of the day was when my five year old niece took a bite and happily exclaimed “Yummy yummy in my tummy!!” So my friends, make this for every party you throw. Seriously.

Cake Batter Dip

  • 1 box funfetti cake mix (or if you want to make the dip in different flavors, you can use any cake mix–carrot cake batter dip anyone??)
  • 1 lb nonfat plain Greek yogurt
  • 8 oz container light Cool Whip
  • extra sprinkles for topping (optional, but honestly, who doesn’t opt to use extra sprinkles)
  • pretzels, animal crackers, fruit, or several spoons for dipping

Directions:

  1. Using a hand mixer, beat cake mix, yogurt and Cool Whip together in a large mixing bowl.
  2. Transfer to serving bowl, and top with extra sprinkles if desired.

Work It Out 4/9-4/15

For a while there, every run was new and exciting and every day I would write about it. Well, now that pretty much every work out I do (except my new favorite speed ones!!) are things I’ve do often or at least have done before, I’ve decided that, unless something is super exciting, to write about workin’ it out for the week as a whole and share my thoughts at the end of the training week. So without further adieu, this is how I worked it out last week

  • Monday: 3 miles with Jason
    I love Monday mornings these days! Jason is just really getting into running, so I meet him for some easy paced miles and it gives us time to chat just the two of us. Not that I don’t love the men in our lives, but it is so nice to have the one on one time to just talk. Every week Jason gets faster and better, and I’m so proud of him!
  • Tuesday: Quick upper body strength training & Linda’s Spin
    Got to the gym early to do a short, but tough upper body work out. Bis, tris, shoulders, and chest. Then went into spin for happy sweat drippy time. Linda’s been working on building us all up to a higher flat road. Mine has been 10 for a few months and the thought of going up to 11 is a little intimidating, but the more we test it out, the more I realize that I’ll be able to hang.
  • Wednesday: Tempo Run & Core/leg strength at PT
    5 miles including 1 mile warm up and cool down. The goal for the tempo miles was 9:09, and I did them in 9:06, 9:06, 8:46. I was so exhausted by the end of the third one that I had to walk the first few seconds of my cool down, but then brought it back to a jog to finish it out. This run was tough, but luckily I ran with my speedy friend Ashley who kept me going when I wanted to die. After our run, I did my exercised at PT which I always forget to count, but they make me sweat and sometimes even get me out of breath, so I guess they should count 😉
  • Thursday: Easy bike ride
    Rode to coffee and back with Steve. 9.15 miles @ 14.6 (I think?? Around there) pace. It was nice and I love getting some morning time with Steve before we both get too busy.
  • Friday: Long Run
    This was without a doubt my favorite run this week! I had 10 miles scheduled, and I was not feeling like doing it solo. Luckily Stacey agreed to run with me for 8.5 of it, so I got to our meeting spot a little early, ran a 1.5 mile loop and then met up with her. She wrote this really awesome post about it that you should read! I love it because she says really nice things about me 😉 But seriously, she was an awesome running partner! It felt like our pace was perfect (I hope I didn’t slow you down, girl!!), we chatted the entire time, and then at the end I pushed her to finish up 9 miles which is now her PDR!! So I ended with 10.5 for the day, felt great almost the entire time and ended up with an average pace of 10:26.
  • Saturday: Firefly Run 5K
    Race recap coming soon! But long story short, this race was super fun, and I ran it with my two best friends. It was Bethany’s first race and she rocked it! I’m super proud of her!
  • Sunday: ZZzzzzzz
    I had actually been planning on spin class, then woke up and asked Steve to go for a bike ride instead, then by the time I did some blogging, I knew I’d be pressed for time before rehearsal, and decided I deserved a day of rest, so I took full advantage of it.

Black & White Peanut Butter Chip Brownies

In case you missed it, which would be super sad for you, Monday was my BBFF Nicole’s birthday! To celebrate, I made her brownies!

Now, I’ll be honest. I don’t usually make brownies from scratch. I usually let TJ’s Reduced Guilt Brownie Mix or No Pudge Brownie Mix do the work for me, because they are both delicious and easy. However, there was no way I was going to use a box mix for Nicole’s birthday. Have you read her blog??? She’s like a real chef. In fact every single time I cook for her, or she eats something I make, I get suuuuuuper nervous.

Luckily, these turned out much better than the gnocchi incident of 2012. In fact, they came out ridiculously good.

And now I have a huge problem on my hands…

All I can think about is brownies!!

Brownies, brownies, brownies, brownies, bbbrrrooowwwwnnniiieeesss!!!

Rich, sweet, gooey and chocolatey with peanut butter chips perfectly complementing the white and dark chocolate.

Or in other words YUM!

Black & White Peanut Butter Chip Brownies

yield 36 brownies

For the white layer:

  • 2/3 cups white whole wheat flour
  • 5.5 ounces Sunspire white chocolate chips
  • 2 tbs light whipped butter
  • 6 tbs nonfat vanilla yogurt
  • 1/3 cup turbinado sugar
  • 1/3 cup Splenda
  • 1/4 cup packed light brown sugar
  • 1/2 cup + 2 tbs egg substitute
  • 1 tsp vanilla extract
  • 1/2 cup Sunspire peanut butter chips

For the black layer:

  • 2/3 cups white whole wheat flour
  • 5.5 ounces Sunspire grain sweetened chocolate chips
  • 2 tbs light whipped butter
  • 6 tbs nonfat vanilla yogurt
  • 1/2 cup turbinado sugar
  • 1/3 cup Splenda
  • 1/2 cup + 2 tbs egg substitute
  • 1 tsp vanilla extract
  • 1/2 cup Sunspire peanut butter chips

For the White Chocolate Glaze:

  • 10 oz bag Sunspire white chocolate chips
  • 1/2 tbs light whipped butter
  • 3 tbs unsweetened almond milk
  • 1 tsp vanilla extract
  • sprinkles for topping (optional)

Directions:

  1. Preheat the oven to 350 degrees F. Butter the sides and bottom of a 9×13 glass baking pan. Line the pan with parchment paper.
  2. Start with the white layer.
  3. In a medium bowl, whisk the flour and salt together.
  4. Put the white chocolate and butter in a large bowl and set it over a saucepan of simmering water (or a double broiler), stirring occasionally, until the chocolate and butter are completely melted and smooth. Turn off the heat, but keep the bowl over the water and add sugars, Splenda and yogurt. Whisk until completely combined, then remove the bowl from the pan.
  5. Add eggs substitute and vanilla to the white chocolate mixture and whisk until combined. Do not over mix.
  6. Gently fold in flour mixture followed by peanut butter chips. Batter will not be completely smooth. Tiny flour clumps will bake out.
  7. Pour into prepared baking pan.
  8. Repeat steps 3-6 with black layer.
  9. Pour black layer on top of white. Use a butter knife to gently swirl.
  10. Bake for 40-50 minutes, turning once in between to ensure even cooking.
  11. Let stand for 10 minutes then transfer to a wire rack to cool completely (this is where the parchment paper comes in handy!)
  12. Make glaze by microwaving white chocolate and butter together in a medium bowl on 20 second intervals, stirring after each, until melted.
  13. Add vanilla and milk and stir until combined.
  14. Spread over completely cooled brownies, top with sprinkles if desired and allow to cool for approx 1 hour.

Skinnified Sunday: Monster Cookies

I have always been a sucker for monster cookies. There are so many ways to make them, but the basic concept includes peanut butter, chocolate chips, M&Ms, and oats. How could you go wrong with those ingredients?! Seriously. I had some at a friend’s birthday and have been dying to make my own ever since. When I noticed that Sunspire had their own version of M&M’s, I bought them immediately knowing monster cookies were on the horizon!

I found the original recipe from Taste of Home

My swaps:

  • ¼ cup Better’n Peanut Butter for half the peanut butter (-fat, -calories)
  • TJ’s Honey Apple Butter for butter (-fat, -calories, -saturated fat, -cholesterol)
  • Splenda* for some of the sugar (-sugar, -calories)
  • Egg substitute for whole eggs (-fat, -cholesterol, -calories)
  • Rolled oats for quick cooking (just what I buy)
  • Sunspire Sun Drops for M&M’s (-sugar, -calories)
  • Sunspire grain sweetened chocolate & peanut butter chips for butterscotch chips (-sugar, -calories)
  • No peanuts (-fat, -calories, and I don’t like nuts in cookies)
  • White whole wheat flour for all-purpose (+fiber, +protein)
  • Extra cinnamon & vanilla (+yum)

*Some people feel really strongly about Splenda. You can easily use all sugar real sugar, I just prefer to cut some of the calories.

I was a little nervous about swapping in the Better’n Peanut Butter, but I was amazed at how well it worked!! That stuff is okay on its own, but it doesn’t compare to the real stuff. In baking, however, I would have never even known there was anything different!

PS, what is the difference between Better’n Peanut Butter and PB2? Does anyone know? All the popular bloggers use PB2, but I couldn’t find it 🙁 And obviously, if all the cool kids are doing it, I don’t want to be the lame one using the wrong peanut butter substitute. Clearly, I have really grown up and no longer use junior high mentality 😉

Okay, but back to the cookies…ummmm…they were gone in one day. Actually like 6 hours.

Whoops.

I think Jason may have eaten 4 in one sitting. Don’t judge him. They were really that delicious. And they’re “healthy” so that means you can eat the whole batch, right?

Skinnified Monster Cookies

Yield 2 ½-3 dozen cookies

  • 1/4 cup PB & Co White Chocolate Wonderful (you can use regular PB, but this is just my favorite!)
  • ¼ cup Better N Peanut Butter
  • ¼ cup honey apple butter
  • ¼ cup packed brown sugar
  • ¼ cup turbinado sugar
  • ½ cup Splenda
  • ¼ cup + 2 tbs egg substitute
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 2 cups rolled oats
  • ½ cup Sunspire Sun Drops
  • ¼ cup grain sweetened chocolate chips
  • ¼ cup Sunspire peanut butter chips
  • ½ tsp cinnamon
  • 1 cup white whole wheat flour

Directions:

1. Preheat oven to 325. Spray a large cookie sheet with nonstick spray.
2. In a large bowl, cream peanut butter, Better N Peanut Butter, apple butter, and sugars. Add egg substitute, then baking soda and vanilla.
3.  Add oats, M&M’s, butterscotch chips and peanuts; let stand for 10 minutes.
4.  Stir in flour.
5. Use a medium cookie scoop  cookie dough onto the baking sheet, then use a sprayed piece of wax paper to flatten slightly.
6. Bake for 15-18 minutes until edges are golden. Let stand for 5 minutes on baking sheet, then transfer to wire rack to cook completely.

I love my cookie scoop. Just saying.

Nicole’s Birthday @ Pizzeria Bianco

If you live in Arizona, and maybe even if you don’t, you’ve probably heard of Pizzeria Bianco. Several reviews call it the best pizza in the United States. It is a tiny little restaurant in downtown Phoenix, and they are known for their delicious, wood oven baked pizzas, and their outrageous wait times. I’ve heard up to 4-5 hours!! And people wait. There’s a bar next door that I’m sure gets a ton of business as people go through multiple bottles of wine waiting for their chance at some pizza.

I had tried to get a reservation there for my birthday, but was told you need to make them about 1-2 months out (YIKES!!). Also, they only make them for parties of 6 or more. For Nicole’s birthday, we made a plan pretty far out in advance, that we would brave the wait times and finally get to try this place.

I want one of these in my house. I'm counting on Lance to make that happen. Nicole's husband has magical powers. Like building ovens, fixing electricity, and changing light bulbs. Yes, I do find changing a light bulb magical. I would be too lazy to even consider it until I had to get out the flashlight app on my phone.

Oh look, my favorite food! Maybe they should create a race special to end right out front and at the end, instead of a medal, they just give you a loaf of bread. A girl can dream...

To our surprise, we were seated immediately! Apparently 6pm on a Tuesday night is the time to get your pizza fix, friends! I was pretty impressed with their fancy glass coke bottles.

It was really nice to get to know some of Nicole’s friends! They were super awesome and fun (obviously, because awesome people keep awesome company 😉 )

I have no idea who that crazy is with the cute husband.

We all ended up ordering a different pizza, and I have to say, none of them disappointed!

Steve and I shared this one. It's called the Rosa and has rosemary, pistaccios, and red onions. It was soooo flavorful!! It was like my tastebuds were having a party like that little rat in Rattatouie!

Nicole's pizza. I know it had ricotta cheese and arugala. It was also super delicious, but I liked mine better 🙂

Lance's pizza....it had....meat. So descriptive, I know. I didn't taste it, but he liked it!

I don't remember who ordered this or what it was, but it looks good!

And the winner issss....! Oh yes, that is my pizza again.

Everything was delicious. I seriously could not get over how bold the flavors were. I don’t think I would wait 4 hours, but I would absolutely go back again!

After dinner we took some pictures. I know, you’re shocked.

BBFFs. This could get awkward real quick if Nicole tells me this term is totally unacceptable and ridiculous.

Then we went back to Nicole’s house for dessert, which of course means I have an other recipe to share with you soon.

This birthday girl knows how to cut some brownies!

I had so much fun celebrating with Nicole and her friends! I feel so honored to be a part of her real life friends group, and to have such an amazing friend in my life!! Happy birthday Niole!!!

Steve’s Birthday Dinner @ Switch

After returning from an awesome weekend up north, I tried to pretend I had nothing else up my sleeve and all birthday surprises were finished. Well I don’t think Steve was super surprised when we arrived to dinner and our friends and family were there waiting. He knows me too well. We arrived at Switch

and met up with Steve’s mom & sister, my mom, Hank, Charlie, my dad, Hermano, Jason & Nacho, Nicole & Lance. Switch is a restaurant and wine bar, and Jason and Nacho had already polished off a bottle of wine before we got there, so I went ahead and ordered myself a delicious glass of pinot grigio.

Then I had total drink envy when Nicole ordered this delicious blackberry cocktail, so i ordered one too. Then I spilled it before I even got to take a sip. I’m awesomely coordinated. But the nice server brought me another one!

Look! It even comes with a blackberry inside! It was super cute, and even more delicious! Also, that photo is of Nicole's drink. I did not drink my wine and that drink at the same time. Not that I wouldn't do that, but I didn't on this particular occasion 😉

We all had an amazing time chatting and hanging out while we waited for our food.

I hate this picture, but there were not a lot of people pictures from the evening, so I'm posting it. My chin looks the size of Texas, and my face looks oddly misshapen. Weird. Hermano looks great though! He finally got a hair cut and so now he can see. It's awesome. Also, slightly less Beiber-like, yes? Which could be a good or a bad thing depending how you look at it...

Nacho is so classy. You should take him to all your fine dining events.

Lance and Nicole

Then the food came, and oh my goodness, it was sooooo yummmmmy!

Yes, those are sweet potato fries. My favorite thing in life. And somehow I'm surprised that I weighed like 10 pounds more after this weekend. I have no idea how that happened.

Steve's birthday burger. I tasted this one too. And still I don't like ground beef, but you know what I do like? Blue cheese. I could eat it plain. In fact, when I was a kid, I used to eat it plain all the time and then my hands would smell really gross like moldy cheese. It was so cute. You're welcome, mom!

This was Nicole's dinner. I forget what it was called, but I can tell you that the flaky bread part was a little like heaven on earth.

Then they brought out dessert with a candle! In fact, they brought out two because we told them Nicole’s birthday was coming up too.

Like pizookie. Yummmmm.

This was super good, but it did not compare to the cupcakes they wouldn’t let me bring in. What’s up with that trendy Phoenix restaurants? I do not prefer this rule.

Hank got this blueberry vanilla bean bread putting thing which put anything I’ve ever created to shame. Maybe that’s bad plugging for my blog to say their food was better? But seriously, this bread pudding was probably made up of sticks of butter and heavy cream and it was incredible. In fact, every single thing I tasted, I absolutely loved. I would most definitely return to Switch again, and again, and again!

We all had a great time and it was the perfect end to a pretty perfect weekend.

Steve’s 31st Birthday Getaway

In case you didn’t notice by the return of actually good photography, Steve is finally back from LA!! Hooray!!! Just one week after he got back, it was already time to celebrate his birthday! He was awesome and decided to be born on Easter weekend which meant I actually had the whole weekend off to spend with him! That never happens, so I decided to take advantage of it, and I got in touch with my friend/best realtor ever, Kathy, and asked about renting the weekend at her cabin in Heber/Overgaard.

Friday afternoon, I sneakily packed our bags, got the puppies and asked Steve if we could go take pictures on a mountain. It was the best cover up ever. I should be in the CIA or something because I am the best at being sneaky and keeping secrets. He didn’t figure out where we were going until we were almost to Fountain Hills, so I couldn’t have done that bad! We decided to stop in Payson for dinner. I looked on yelp, and found the Buffalo Bar and Grill.

I absolutely loved this little place. They didn’t typically allow dogs, but they let us sit outside with Winston and Clementine, and then even brought them water! The food was delicious too. Steve got a green chile burger.

That potato salad was super delish. I always try his burgers and never really like the taste of ground beef, yet I keep tasting it...? I'm weird.

I got a grilled chicken sandwich with buffalo sauce…my faaaavorite. YUM. And my fav guilty pleasure–SWEET POTATO FRIES!!!

Running is worth it when sweet potato fries come at the end of the day.

"OMG, I find this food more almost as exciting as your birth!!!!"

As you can see from this picture, I am super classy and attractive. It’s obvious why Steve married me.

By the time we got to the cabin, it was pretty late (for us old people) so we hung out for a bit, then went to bed pretty early. The next morning we woke up at the ridiculous hour of 6am because we are incapable of sleeping in. We hung around for a bit with the puppies.

"Mom, it's 6am. This is ridiculous."

"Boy, that walk from the bedroom to the couch really wore me out! I think now is a great time for a nap."

I discovered the waffle maker and it was love at first waffle!

Why have I NEVER made waffles before?!?!?! And why do I not own one of this incredible contraptions that creates the waffles?! This is a serious problem.

Ummm, as soon as we got back on Sunday, I bought a waffle maker. Stay tuned for a whole slew of waffle recipes.

While I was discovering waffle amazingness, Clementine was discovering stairs.

"Okay, I made it up here, but how the heck do I get back down?!?!"

Have you ever watched a mini dachshund climb up and down stairs?? It’s pretty funny. Her legs are so short, and her body is so long! She definitely took a spill or two.

"Stairs aint got nothin' on me!"

"Yes mom, I'm long and cute and you get no credit for that. Even though we have the same body type (long body, short legs, big butt), you do not receive credit for my super cuteness."

Clementine has so much attitude. I am totally responsible for her cuteness. I mean, where else would she learn this?

I roll around on the carpet daily. Clementine tries to copy. Whatever. I started it.

After hanging out for a bit, we decided to go down to Payson. There’s pretty much nothing to do in Overgaard, so we went in search of something fun, and of course, coffee. Yelp took us to a place called Scoops which had coffee and ice cream. My two favorite things!

I asked the barista what he suggested for something fun to do in the area and he suggested a hike along Tonto Creek. Neither of us were really dressed for hiking, but we decided to head over and at least check out a little bit of it, and I was really glad we did! It was really easy and mostly flat. More like a nice walk along the creek than a hike. Winston and Clementine got to experience nature beyond the dog park!

On the way back to Overgaard, we stopped at a lookout on the 270.

Oh my gosh...TREES! We don't have those in Phoenix. Only the prickly kind.

They are so foreign, we must take pictures in case we can't remember what they look like when we get back to Phoenix!

We picked up some things for dinner, a couple movies from the red box, and stayed in for the night. I made a super impressive dinner that included hot dogs and a can of baked beans. I hate the name of this dish, so I refuse to use it, but Steve loves it and is always going on about it, so I made it for him. Plus some asparagus to pretend like I actually do eat healthy.

Totally does not look cute, but I have to admit, it was pretty yummy. I'll have to try it again, and make the beans myself and use turkey dogs instead of beef. Slim pickins up at the Overgaard market.

We tried a new beer I picked up from Whole Foods.

Yummmm. I would definitely buy this again!

Then we watched Like Crazy (I don’t really have an opinion–didn’t love it, didn’t hate it. It happened, I guess.) and Carnage which I LOVED. I know friends of mine who have seen/read the play, didn’t love the movie, but I still haven’t seen it, and I thought it was hilarious. Jodie Foster was a total nut and I loved every second of it. I can’t wait until I have the opportunity to see a professional theatre production!

And that was pretty much it. We’re kind of boring people, but we loved it and had a great time, and headed back pretty early Sunday morning for some more festivities that night.

Special thanks to Kathy for renting our her amazing cabin!! If you live in Arizona or you want to come out this way and are interested in getting away from the city for a bit, I highly recommend it! The cabin has 3 bedrooms, a full kitchen with cooking equipment (like WAFFLE MAKERS!), a gorgeous rustic feel, and lots more! I can’t wait until we are able to return!

Vanilla Bean Cookie Butter Cup Cupcakes

I have a serious problem.

How do you live with a fridge full of this and not eat every last one?? Seriously.

Well, I guess the fact that they were made for someone else is pretty good for the whole self control thing. I canNOT make cupcakes like this that are just for me. I will eat a dozen in about 2 days hours minutes.

Remember when I made these and said they part one of a special baking project?? Well, I made vanilla bean cupcake batter, swirled in some cookie butter, then pressed one into the center before baking.

I thought they would bake much faster than normal cupcakes, or that the cookie butter cup would just melt right into the cupcake, but they baked for a normal amount of time (18 minutes) and came out looking perfect!

Then I made a Cookie Butter Cream Cheese Frosting and things got REAL over here.

Because what good is a cupcake picture if you don’t cut it in half and show off all the gooey insides?!

Also can we check out all those vanilla bean specs?! In the cupcake and the frosting. Can’t. Get. Enough.

These weren’t completely cooled, so everything just came right out. I love that. If you don’t, just make sure you cool them in the fridge first. But seriously, if you don’t like warm, oozey chocolate, who are you and why are you even reading this blog?!

Just kidding, please keep reading. I can overlook your weird textural preferences. Maybe…

HAPPY BIRTHDAY STEVE!!!! I couldn’t have picked a better occasion to make probably the best cupcake I have ever created. Obviously, you inspire me 🙂

Vanilla Bean Cookie Butter Cup Cupcakes

yield 15

  • 1 1/2 cups white whole wheat flour (or all purpose)
  • 1/2 tbs baking powder
  • dash salt
  • 1/2 vanilla bean, split lengthwise
  • 1/2 cup unsweetened applesauce (or butter)
  • 3/4 cup sugar
  • 2 eggs
  • 3/4 cup reduced fat buttermilk
  • 1/2 tbs vanilla extract
  • 2-3 tbs TJ’s Cookie Butter (or Biscoff spread), melted
  • 15 Salted Chocolate Cookie Butter Cups, frozen

Directions:

  1. Preheat oven to 350. Line cupcake pans with paper liners. Spray lightly with nonstick spray, then set aside.
  2. In a medium bowl, whisk together flour, baking powder and salt. Set aside.
  3. In the bowl of a stand mixer (or you can use a hand mixer if you don’t have a stand one), add applesauce and sugar. Scrape in seeds from vanilla bean and beat on medium speed.
  4. Beat in eggs one at a time.
  5. In a glass measuring cup (or separate bowl) combine buttermilk and vanilla extract.
  6. With mixer on low speed, alternately add flour and buttermilk mixtures, starting and ending with dry ingredients.
  7. Beat until just incorporated, scraping down sides of the bowl when necessary.
  8. Fill 15 cupcake liners 2/3 of the way full. I used a medium sized cookie scoop and it took 1 1/2 scoops per cupcake.
  9. Drizzle in a small amount of cookie butter into each cupcake, and swirl lightly with a toothpick.
  10. Press one Salted Chocolate Cookie Butter Cup into each cupcake.
  11. Bake for 17-19 minutes. (I always turn mine around halfway through to keep even cooking)
  12. Let stand for 5 minutes, then transfer to a wire rack to cool completely.
  13. Top with Vanilla Bean Cookie Butter Cream Cheese Frosting.

Vanilla Bean Cookie Butter Cream Cheese Frosting

yield enough for 20 cupcakes

  • 16 oz reduced fat cream cheese, softened
  • 1 cup TJ’s Cookie Butter
  • 1 vanilla bean, split lengthwise
  • 3 cups powdered sugar

Directions:

  1. Place cream cheese and cookie butter in a large bowl. Scrape in vanilla bean seeds and beat together for 1 minute.
  2. Slowly beat in powdered sugar, scraping down sides of bowl when necessary.
  3. Frost immediately, or chill in refrigerator.

Salted Chocolate Cookie Butter Cups

Honestly, does it really get any better than chocolate and cookie butter?

The answer you’re looking for is “No. It does not.”

Well unless you add Fleur De Sel. Then it absolutely does.

Freaking yum.

What do you even say about something that is basically a Reese’s Peanut Butter Cup, but made with TJ’s Cookie Butter and sprinkled with Fleur De Sel?

You say “Yes, please” and don’t ask any questions.

These are actually part one of a baking project that will continue tomorrow for a very special person’s birthday. A person so special, that he gets homemade candy inside his birthday cupcakes. He’s a lucky guy, I tell ya.

One of the best things about this recipe is that there are endless combinations. White chocolate, milk chocolate, any type of nut butter that exists, you name it. Trust me, I have about a million variations floating around in my head right now. Just think of it as a ‘coming soon’….

Until then, please join me in drooling over these bad boys and wishing they were magically calorie free. In a perfect world, right? Oh and did I mention they only have 4 ingredients? Almost perfect world…

Salted Chocolate Cookie Butter Cups

yield 24

lightly adapted from Ashley‘s Chocolate Maple Cinnamon Almond Butter Cups

  • 20 oz dark chocolate (chips, or good quality chocolate chopped)
  • approx 1/2 cup Trader Joe’s Cookie Butter
  • 1 scant tbsp coconut oil
  • Fleur De Sel for sprinkling

Directions:

  1. Line 24 mini muffin tins with paper liners.
  2. In a medium bowl, melt chocolate and coconut oil in the microwave in 20 second intervals, stirring after each, until melted.
  3. Spoon enough chocolate to cover the bottom of each baking cup.
  4. Add 1-2 tsp Cookie Butter.
  5. Fill with chocolate until Cookie Butter is completely covered and top is smooth.
  6. Sprinkle with a nice pinch of Fleur De Sel.
  7. Freeze to set. Keep in freezer or fridge.

Spin & Speed (the legal running kind)

It’s Wednesday, which means tomorrow is Thursday and then Friday Friday gotta get down on Friday! Oh Rebecka Black. I wish you’d come out with an other song for me to make fun of. I so enjoyed the first one. Now that you’re super impressed by my knowledge of the days of the week, let’s talk about something slightly more exciting. Like how yesterday was the BEST SPIN CLASS EVER!!!! Why?? Well, they accidentally over filled the class and so Linda chose not to ride so someone could have her bike. This meant she had the entire hour to walk around checking our gears and our pace. Some people may not prefer this, but in case you didn’t notice, I have teacher’s pet syndrome. I want nothing more than the approval from my teacher and since usually I am the teacher, I have to get this in my work out classes. And also I make Steve constantly give me praise. Seriously, even in college I hung my papers up on the refrigerator. Remember that Heather? Our fridge was covered in theatre history exams.

Anyway, Linda came over to me a few times and didn’t tell me to pedal faster and didn’t adjust my gear like she did to some people which I took as a sign that I was at the right place. Then we were on the biggest hill of the class and I was dripping sweat and pedaling along at gear 20 when she came over, looked at my display and told me “GOOD JOB!!!!!” Actually I believe her exact words were “Good girl” kind of like I’m a dog, but I’m totally fine with that. In fact my ballet teacher used to say that all the time, and I always found it cute and not patronizing like she found me to be a puppy. This dubbed Tuesday April 3rd 2012 as best spin class ever.

You know what’s weird? Writing about my training these days. I felt like when I was training for PF Chang’s everything was so new and every long run was worthy of a recap and I had so many thoughts and so much to say. Now that I’ve run 2 half marathons, talking about how I ran 10 miles doesn’t seem all that exciting. You know what I am super pumped about though? Speed work!!

This will be me by the time RnR Seattle rolls around!

Without a doubt, my favorite part of this new training plan. Maybe I’m not breaking any PDRs right now, but speed training is super new to me and I am absolutely loving following a real training plan. I mean I know that Smart Coach doesn’t actually care if I do his/her/it’s work outs, but it makes me feel accountable, and I am really appreciating having the speed goals set out for me ahead of time. The question I kept asking all my smart runner friends (or smart runners that I think are really cool and want them to be my friend) is

“But how fast do I goooo????”

I honestly had no idea. Well Smart Coach is…smart. He knows. Actually, I think she’s a woman. Because she’s so smart. She knows 😉 Today she told me to run 5 miles including 1 mile warm up, 3 miles @ 9:13, and a 1 mile cool down. I woke up, avoided going outside because I was not excited about going for this run, and sure I was going to suck. Way to stay positive, Ari. Then I started and felt AWESOME. My warm up felt light and I was really enjoying being outside and running. I started my first tempo mile, looked down at my garmin to see an 8:37 pace flash up. COOL! But definitely not sustainable, so I chilled out a little and backed off and my tempo miles ended up looking like this

So I’m so serious about this no cheating/pausing business that I even ran around a parking lot during my first tempo mile so I wouldn’t have to stop. But then I got pissed in the last one because I had to stop and use the bathroom, and I know that little breather made my last mile faster, so while I was super excited about it, I don’t feel like that last one is completely legit, and I’m annoyed because I didn’t want to stop. Whatev, I still killed my tempo goal and ended on total runners high!

It’s different to feel that kind of excitement and not have it be after a long run. It’s weird to say “I had the most awesome 5 mile run today!!!” But with the slow and steady approach to long runs (that I probably should have followed more closely all along), I find then nice, but less exciting and fulfilling if that makes sense. I mean, I know they need to get done, but running faster? Now that is something that makes me excited! Meeting and exceeding goals? Sign me up!

I seriously can’t wait to run an other race and see what I can do! Pat’s Run is coming up which is 4.2 miles. I *think* if I really push and run with Speedy Gonzales, I can run with a sub 9 min/mi average. That’s the goal.

Ohhh, and lastly, last night I had dinner with some fabulous AZ Blogger ladies, and somehow ended the night with only a lame picture of my salad. Sad. It was really nice to see Emily and Estela again, and to finally meet Ali! As usual, I carpooled with Nicole, and made her late. I suck. After dinner, Nicole and I grabbed fro yo (Umm, I think if neither of us felt embarrassed about it, we would end up meeting for fro yo about twice a day) and sat and chatted for a while (naturally). Man you get the two of us Chatty Kathys together and we could probably talk for a week straight! By the waaaayyyy, Monday is Nicole’s birthday in case you wanted to head over to her blog and wish her a happy birthday, or by her a BMW.
