Whopper Cookies

Whopper Cookies

One time I went on vacation with my dad, and he tried to take a box of whoppers through the line at security. It had already been opened, and they wanted to check inside the box. He then had a legit argument with the TSA about how if they wanted to dig inside his candy box, they were going to need to buy him a new one.

Well, I’m sure you’ll be shocked to know, they bought him no new box of candy. I mean, you just don’t argue with the TSA. Listen, I don’t like it any more than you do when they put me in that machine that basically shows them my naked body (does anyone else feel like this is the most awful part of traveling????) butI like to actually be able to get on the plane, so I would rather keep my mouth shut.

Steve likes to make things difficult, and refuse to get him, so they make him get a pat down. I feel like that would be, umm, way worse, but he is stubborn. Anyway, enough about airport security. Cookies are, like, 5 zillion times cooler!

I feel malt is sooooo under rated. I really don’t know why I haven’t put it into every baked good I’ve ever made. The sweet, strong taste pairs perfectly with milk, chocolate, beer, you name it!

Whopper Cookies

These cookies give you a double dose with malted milk powder in the cookie base, and then the dough is stuffed with chocolatey malty Whoppers candy, and of course chocolate chips for an extra dose of chocolate–extra chocolate is always necessary. The Whoppers get a little soft as the cookies bake, but as they cool, they quickly return to their crunchy texture bringing a nice texture to these ultra-soft cookies.

Peanut butter cookies are usually my favorite,. but these babies give my normal peanut butter love a run for it’s money. They stay soft for days too–if you can keep ’em around that long. šŸ˜‰

 

Whopper Cookies

yield 3 dozen

  • 2 1/4Ā cups white whole wheat flour
  • 1/2 cup malted milk powder
  • 1Ā tsp baking soda
  • dash salt
  • 1Ā cupĀ fat free (or reduced at) cream cheese, softened
  • 2/3 cup granulated sugar
  • 2/3 cup packed brown sugar
  • 1 1/2 tsp vanilla extract
  • 2Ā large eggs
  • 1/2 cup dark chocolate chips
  • 5 oz box of Whoppers

Directions:

  1. In a medium bowl, whisk together flour, malt powder, baking soda and salt. Set aside.
  2. In the bowl of a stand mixture, beat softened cream cheese until fluffy. Beat in sugars until well combined. Add vanilla. Beat in eggs one at a time.
  3. Slowly, stir in dry ingredients until combined, scraping down sides of the bowl when necessary. Gently, fold in chocolate chips and Whoppers.
  4. Refrigerate dough for at least 30 minutes. Preheat oven to 375. Line two large baking sheets with Silpat or parchment paper.
  5. Roll chilled dough into 1″ balls and transfer to baking sheet. Bake until edges are golden and cookies are just set, about 10-12 minutes. Let stand for 10 minutes, then transfer to a wire rack to cool completely. Store in a not quite airtight container (if they don’t breathe, they lose their texture, but I wouldn’t leave them next to a vent either) for 5-7 days.

I want to tell you about one of my favorite nights ever in life.

I was training for my first half marathon, Steve and I invited Kara, Charlie and Hermano over for dinner to celebrate Long Run Day. It’s a real holiday when you’re training. Trust me.

We went to Whole Foods and each picked out our meat of choice, and I made a sweet potato hash on the side. We ate a delicious dinner paired with lots of dark, sweet beer (my favorite), and then we watched the Muppets Christmas Carol. It was December, and that is pretty much my favorite holiday movie.

Around the middle of the movie, we all started to want dessert. I was maybe, kind of, a little…tipsy. I usually at least follow a base recipe for an idea of liquid/flour/leavening agent ratio, but I didn’t measure a single thing. I flew by the seat of my pants, and hoped for the best.

Well, Hermano has been obsessed ever since. He calls it his favorite dessert I’ve ever made. Although, like my husband, I feel like he says that a lot. šŸ˜‰ Anyway, he’s been asking me to recreate for the last year, and I kept telling him I didn’t know how.

Last weekend, he performed in the southwest regionals concert. He got second chair as a sophomore! He was also asked to play with the choir. I was feeling like a super proud sister, so Steve and I surprised him with a steak from Whole Foods, and I told him I could make him whatever he wanted for dessert. He, again, requested “that one thing….with the banana…” He has a way with words.

So again, I decided to wing it. This time I measured, but I just made it up as I went, and hoped for the best. I had no intentions of photographing it, or blogging about it, but after one bite, I knew it was too good not to share. Hermano immediately confirmed that this was the dessert he wanted. I know I changed it up a little, but the idea was similar, and the cream cheese frosting just took it to the next level.

Sweet, tender, soft and gooey banana cake filled with white chocolate and cinnamon chips, and topped with rich cream cheese frosting. I don’t know how I ever doubted the success of this dessert! Whenever I make things up as I go, I almost always have a moment where I decide I’ve “ruined it”, or it’s a total flop, but usually it’s just my silly anxieties. Now I know I had absolutely nothing to worry about here!

White Chocolate & Cinnamon Chip Banana Cake

yield 16 servings

  • 3/4 cup white whole wheat flour
  • 1 tsp baking soda
  • dash salt
  • 2 very ripe large medium bananas
  • 3/4 cup dark brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1/4 tsp butter extract (optional)
  • 1/2 cup white chocolate chips
  • 1/2 cup cinnamon chips

Cream cheese frosting:

  • 4 oz reduced fat cream cheese
  • 1 tbsp light whipped butter
  • 1 1/4 cups powdered sugar
  • 1 tsp vanilla extract

Directions:

  1. Preheat oven to 350. Line an 8×8 pan with foil and spray with nonstick spray. Set aside.
  2. In a medium bowl, whisk together flour, baking soda and salt. Set aside.Ā In a large bowl, beat together bananas, sugar, egg and extracts. Mix in dry ingredients until just combined. Fold in white chocolate and cinnamon chips.
  3. Transfer mixture to prepared baking dish and bake until golden and a toothpick inserted in the center comes out clean, about 20-25 minutes. Cool completely on wire rack.
  4. Meanwhile in a large bowl, beat cream cheese and butter until fluffy. Slowly, 1/4 cup at a time, beat in powdered sugar, scraping down the sides of the bowl when necessary. Beat in vanilla.
  5. Remove completely cooled cake from baking dish and top with cream cheese frosting. Store in an airtight container in the refrigerator for up to 5 days.

Taco Mac & Cheese {like DIY Hamburger Helper}

Have we ever talked about how I went from a fast food diet to Ari’s Menu? I could hardly boil water. My dad can’t even make spaghetti or boxes of Kraft mac & cheese. I grew up constantly eating out, and spent the first few years of college making grilled cheese sandwiches, heating up ramen noodles, and in the Jack in the Box drive through.

When I moved home from Idaho, I had sparked an interest in cooking. I graduated to Hamburger Helper. It’s funny now, but I loved the stuff. I would swap out my ground turkey, and for me, that was “healthy cooking”. I guess I’ve come a long way in the last few years. šŸ™‚ Just ask my mother in law about the time I tried to make gravy….

Taco Mac & Cheese

When the thoughtĀ occurredĀ to make taco mac & cheese, I didn’t realize that it was so similar to the Hamburger Helper I started out on, but it is similar–just a whole lot better. Real foods, tons of lean protein, and whole grains. Plus, it’s so simple that there is really no reason to cook from a box ever again!

I made this for Steve and Jason to rave reviews. I’m pretty sure Jason ate 3 bowls. Then I gave Steve’s mom the leftovers when she came over for lunch, and she’s been asking when I’m going to post the recipe ever since. šŸ™‚

All of the flavors of macaroni and cheese mixed with bold spicy taco seasonings topped with creamy avocado for the perfect final touch. I loved this dinner so much I made it again not even a week later! That is unheard of for me.

My favorite thing about this dish is it really represents everything I feel like this blog stands for–simple comfort food made healthy. That’s the whole reason I started cooking–I didn’t want to give up foods like tacos and mac & cheese. šŸ™‚

 

Taco Mac & Cheese

yield 6-8 servings

  • 1-2 tsp olive oil
  • 1 medium onion, chopped
  • 2 bell red, yellow, or orange bell peppers
  • 3 cloves garlic, finely chopped
  • 1 lb lean ground turkey or beef (I used 99% ground turkey breast)
  • salt and pepper
  • 8 oz whole grain macaroni (whole wheat, brown rice, quinoa….whatever works for you)
  • 4 oz reduced fat cream cheese
  • 3/4 cup unsweetened almond milk
  • 1 cup nonfat plain Greek yogurt
  • 3 tbsp taco seasoning
  • 1 tbsp lime juice
  • couple dashes hot sauce
  • 2/3 cup shredded reduced fat sharp cheddar cheese
  • sliced avocado and chopped cilantro for serving

Directions:

  1. In a large pan over medium heat, saute onion, bell peppers, and garlic until tender, about 10 minutes. Add turkey and season with salt and pepper (about a pinch of each). Cook until turkey is browned, then remove from heat.
  2. In a medium pot, cook macaroni according to package instructions.
  3. Meanwhile, in a large pot, whisk together cream cheese and almond milk over medium-low heat until combined. Whisk in greek yogurt, taco seasoning, lime juice, and hot sauce. Stir in cheddar cheese until melted and combined.
  4. Stir turkey and veggies into sauce, then stir in cooked and drained pasta.
  5. Top with sliced avocado and fresh chopped cilantro.

Today is a very special day!! It’s my amazing, wonderful friend Lisa’s birthday! I’ve known Lisa since myĀ sophomoreĀ year of college, which doesn’t seem like that long ago, but when I do the math, I realize that it was almost 9 years ago. Yikes. I’m old. But it’s okay because Lisa is older.

I will never forget when I went away to college (I stayed local at community college beforeĀ transferringĀ to Idaho), I had a hard time being away from friends and family on my birthday, and Lisa always sent me the BEST care packages! This year, I wanted to make her feel extra special, so I sent her a care package that *hopefully* will arrive today with these cookies, and a flashcard timeline of our friendship. Complete with stick figure humans and dogs.

I may or may not have cried for about half of the time it took to put this together. I also cry picking out cards for all occasions. What can I say? We all know I’m an emotional human. Anyway, Lisa’s favorite candy bar is a Take 5. I’d never had one when I met her, but she introduced me, and I was instantly hooked. I haven’t had one in years and years (except for a couple pieces in the cookies I saved for “taste testing”), but I remember loving the combination of creamy chocolate, sweet caramel, peanuts, peanut butter and salty pretzels. It is everything amazing in the world of candy all mixed into one bar!

I knew I wanted a peanut butter cookie base to partner with the Take 5 candy bars, so I went with my favorite peanut butter cookie base, and used White Chocolate Wonderful because Lisa loves it as much as I do. Then, I added white chocolate chips because I knew I wanted a little extra add in.

The result? They were everything I hoped they would be, and the perfect way to send lots of love to one of my favorite people in my life.

  • 1 cup peanut butter
  • 1/2 cup sugar
  • 3/4 cup dark brown sugar, packed
  • 1 egg
  • 1 tsp vanilla
  • 3 full size Take 5 candy bars, chopped
  • 1/3 cup white chocolate chips

Directions:

  1. Preheat oven toĀ 350. Line 2 large cookie sheets with silpat or parchment paper. Set aside.
  2. In a medium bowl, whisk together flour, baking soda, and baking powder. Set aside.
  3. In a large bowl (I used my stand mixer), beat together cream cheese, peanut butter, and sugars until combined. Beat in egg, then vanilla. Gently, fold in chopped Take 5 bars and white chocolate chips. I ended up just using my hands to get everything combined.
  4. Roll dough into balls just over 1″ and transfer to prepared baking sheet. Bake until edges are golden and cookies are just set, about 12-15 minutes. Do not over bake.
  5. Let stand for 5 minutes, then transfer to a wire rack to cool completely. Store completely cooled cookies in a tupperware with the lid sitting on top, but not sealed–these will get mushy if they are in a completely airtight container–for up to one week.

The thing is, my sweet tooth has gotten totally out of control, and I’m not running right now to at least balance out all the sugar I want to eat ALL THE TIME, so something needs to give. My friend Heidi is always making all sorts of delicious treats that are only sweetened by dates, then the other day Sally made some that looked amazing too.

Then, I went to Whole Foods, and they had samples of something pretty similar, and it literally tasted JUST LIKE COOKIE DOUGH. I looked at the ingredients, took it as a sign, and went right home to my food processor.

You guys, THEY TASTE JUST LIKE COOKIE DOUGH!!! Not like the “oh these taste pretty good for healthy food” or in the way a Larabar says it tastes like cookie dough, but really just tastes like a delicious snack; no–these taste like legit cookie dough, and the 8 that came out of my batch lasted about a day. Soft, chewy, cinnamony goodness that is totally good for you. I’m in so much love. I made these Wednesday, and it took me all of 36 hours to share them with you!

 

Oatmeal Raisin Cookie Dough Bites

yield 8

  • 3/4 cups chopped pitted dates
  • 1 tsp vanilla extract
  • 1/4 tsp butter extract
  • 1 tbsp almond butter (or peanut butter, or sunflower butter, or whatever kind you like)
  • 1 tbsp chopped roasted almonds (or any nut of choice)
  • pinch salt
  • 1 tsp cinnamon
  • 2 tbsp rolled oats (use gluten-free if that’s important to you)
  • 1/4 cup raisins
  • finely shredded reduced fat unsweetened coconut for rolling (optional, but recommended)

Directions:

  1. Blend dates and extracts in your food processor until they form a sticky ball, about 4-5 minutes. Add almond butter, and continue to process until combined. Add almonds, salt, cinnamon and oats, and process for 1-2 more minutes, until everything is sticking together.
  2. Remove dough from food processor. Use you hands to fold in raisins.
  3. Roll dough into 1″ balls. If desired, roll in coconut. Store in an airtight container for up to 1 week.

Pretzel M&M Peanut Butter Cookies

Remember my pretzel m&m obsession? It actually started over the summer. You see, I’d been wanting to try them ever since I heard they were a real thing. But I figured trying, and inevitably falling in love with a new type of candy was probably a horrible decision. Then my friend Kara had some in her freezer (yes, they are delicious frozen), and I caved.

She lurred me in by telling me they had less calories than other varieties. That pretzel takes up all of this room, and has less calories than chocolate. Well, okay then…that makes it a healthy candy, right?

Ever since, I can’t get them out of my mind. Sweet chocolate, salty pretzel with a candy crunch? What’s not to love?? Well, obviously the only way to make them better is to put them into a cookie. A peanut butter cookie to be exact.

The first time I made these was for book club and although I liked them enough to bring them, they weren’t perfect yet. I knew I didn’t want to share them with you guys until I was 100% in love with them, so I tried again, and this time I added chocolate chips, took out a little flour, and didn’t chill the dough. I think the rice krispies soaked up too much liquid when I chilled it the first go around, and they lost their crunch.

I am SO glad I gave them a second try! They ended up with the most perfect cookie texture–you know, crunchy on the outside, soft and gooey on the inside. The extra chocolate worked like a charm, and the cereal was crunchy, and added that little bit of extra texture I was craving. They were a huge hit, and Steve even said he had a new favorite cookie! šŸ™‚

 

Pretzel M&M Peanut Butter Cookies

yield 1 1/2 dozen

  • 1 cup white whole wheat flour
  • 3/4 tsp baking soda
  • 1/2 tsp baking powder
  • 4 oz light cream cheese

  • 1 egg
  • 1 tsp vanilla
  • 1/2 cup crispy brown rice cereal (or just regular rice krispies if you have them on hand)
  • 1 cup pretzel m&ms
  • 1/2 cup dark chocolate chips

  2. In a medium bowl, whisk together flour, baking soda, and baking powder. Set aside.

So for a hot second, I was pretty sure that after our first video, Nicole and I would be crazy to ever try this crazy idea again.

I mean, I’m pretty sure we made every mistake one could possibly make when embarking on this kind of adventure. We forgot to plug in our microphones, we exported the video incorrectly, and ended up with a video that looked like when Mike TV goes into millions of pieces to be transmitted to the television in Willy Wonka and the Chocolate Factory.

Then there was the editing, which took usĀ five hours. That is the amount of time it took us to run a marathon when I was injured. We also both decided this was more difficult.

But then you guys were so kind. You gave the most supportive and kind response, and you didn’t even make fun of the visual quality of our video. You actually took 6 minutes out of your day, and watched us take this big step. I was beyond nervous, and I wasn’t sure I evenĀ wantedĀ anyone to watch, but this awesome blogging community has been nothing but positive and supportive. So with newfound respect for everyone who has ever posted a vlog or video on the internet, we made a list of things we wanted to improve, and set off for round 2.

Whether or not you are a Valentines Day person, I feel like the love of red velvet is pretty universal. And if you don’t like red velvet, honestly what is even happening inside your taste buds?!

I’ve always wanted to try making red velvet whoopie pies. I always imagined them with a white chocolate cream cheese frosting. Then, I was shopping for ingredients and, almost instinctively, I grabbed a jar of marshmallow fluff. The rest is history, because I am over-the-moon obsessed with this filling. It’s perfect for cakes, cupcakes, whoopie pies, spoons, and fingers. Light and fluffy with the sweet hint of white chocolate–I diiiie.

When the cakes came out of the oven, I almost couldn’t believe it! They were more beautiful, soft, and fluffy than I ever imagined they could be. It was one of those happy kitchen moments where you want to jump up and down, and sing from the rafters (OMG, why did I not do all of those things on camera? Silly Ari…) about that very special thing you’ve just created. I’m glad Nicole was there to experience it with me. Hermano said they were probably the best thing I’ve ever made, and I might agree. I am pretty darn proud of them, and I just want you all to make them, like rightthissecond, because I am pretty sure you will love them too.

Red Velvet Whoopie Pies

adapted from Better Homes and Gardens

yield 1 dozen large whoopie pies

  • 2 cups white whole wheat flour
  • 2 tbsp unsweetened cocoa powder
  • 1/2 tsp baking soda
  • dash salt
  • 1/2 cup unsweetened applesauce
  • 1 cup light brown sugar, packed
  • 1 egg
  • 1 tsp vanilla
  • 1/2 cup reduced fat buttermilk
  • 1 oz red food coloring

For the filling:

  • 8 oz reduced fat cream cheese, softened
  • 4 oz marshmallow fluff
  • 1/4 cup white chocolate chips, melted and cooled
  • 1 tsp vanilla extract
  • 1 cup powdered sugar

Directions:

  1. Preheat oven to 375. Line 2 large baking sheets with a silpat or parchment paper. Set aside.
  2. In a medium bowl, whisk together flour, cocoa powder, baking soda and salt. Set aside.
  3. In a stand mixer (or large mixing bowl), beat together applesauce and brown sugar until well combined. Add egg and vanilla. Continue beating until fully combined.
  4. Alternate adding flour mixture and buttermilk to applesauce mixture starting and ending with dry ingredients. Scrape down the sides and continue beating until combined.Ā Add food coloring, and continue mixing until dough is red throughout.
  5. Use a small cookie scoop sprayed with nonstick spray to transfer dough to prepared baking sheet. Bake for 7-10 minutes. Let stand for 3-5 minutes, then transfer to a wire rack to cool completely.
  6. To make the filling, beat cream cheese in a medium mixing bowl until fluffy. Beat in marshmallow fluff, followed by white chocolate and vanilla. Slowly, beat in powdered sugar.
  7. Top flat side of half of the whoopie pies with filling, then cover with remaining pies. Store in an airtight container in the refrigerator for 5 days.

I don’t eat a lot of muffins. I mean, I’ve never met a baked good I don’t like, but a muffin isn’t what I generally grab. I usually find them to be glorified cupcakes without the frosting, and really, why would you want a cupcake with no frosting???

Well, these muffins do not taste like a cupcake, and I love that. They taste like everything you could ever want in a breakfast: spicy chai, sweet vanilla and, of course, carbs. Yes, carbs have a taste. I would describe it as ā€œamazingā€ or ā€œperfectionā€.

I have a secret. These actually started out as cupcakes. You see, that’s much more my style, but as I frosted them with a sugary glaze, I just wasn’t in love. These flavors are bold, and the ā€œcupcakeā€ came out so perfectly soft and moist that I didn’t want to hide it. So I tried again. I took away some excess sugar, cut the frosting, and I discovered that muffins can actually be pretty spectacular.

They would pair perfectly with your breakfast protein of choice, or smeared with peanut butter as an afternoon snack, or dusted with some cinnamon and powdered sugar for dessert. They are incredibly versatile and at 89 calories a pop, why not enjoy??

You may have noticed my untraditional ā€œbuttermilkā€. Well, it’s not only to make the recipe vegan (added bonus!), but honestly, every time I seem to buy buttermilk, it just sits in my fridge and then goes bad. Instead, I used a cup of Silk Pure Almond Vanilla with 1 tbs of apple cider vinegar. In addition to keeping the muffins vegan, using the Silk saved an extra 5 calories per muffin opposed to making homemade buttermilk with skim milk. Now, 5 may seem like nothing, but as my tagline says, I truly believe that ā€œLittle changes make a big differenceā€, and I promise that after you’ve gone through the entire batch (trust me, it’s inevitable), those 5 calories will add up!

Ingredients

  • 1 1/4 cup Silk Pure Almond Unsweetened Vanilla
  • 1 tablespoon apple cider vinegar
  • 1 1/3 cups white whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 tablespoon cornstarch
  • 1/4 teaspoon salt
  • 3/4 teaspoon ground cardamom
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon cloves
  • 1/8 teaspoon ground nutmeg
  • 3/4 cup sugar
  • 1/4 cup unsweetened applesauce
  • 1 vanilla bean

Instructions

  1. Preheat oven to 350. Line a 12-cup muffin tin with paper liners and spray lightly with nonstick spray. Set aside.
  2. Measure out almond milk and add apple cider vinegar. Let stand for 5 minutes.
  3. In a medium bowl, whisk together flour, baking soda, baking powder, cornstarch, salt, cardamom, cinnamon, ginger, cloves and nutmeg.
  4. In a large bowl, beat together sugar and applesauce. Scrape out the center of vanilla bean and add to the mixture. Beat until combined. Alternate adding dry and wet ingredients to the sugar and apple sauce mixture in 3 additions beginning and ending with dry ingredients. Mix until well combined.
  5. Divide batter evenly between lines muffin tins and bake for 25 minutes, until a toothpick inserted in the center comes out clean. Let stand for 10 minutes, then transfer to a wire rack to cool completely.

As soon as they came out of the oven with that perfect crackle on top, I was thrilled that not just a better looking cookie had come out of my oven, but a downright beautiful cookie! Then the pessimist in me decided that surely they were going to taste bad, because that’s how that day was going.

Chai Spiced Snickerdoodles {vegan}

Ultra soft vegan & gluten-free snickerdoodle cookies with warm, comforting chai spices--perfect for fall or winter holidays!

Ingredients

  • 2 cups gluten-free baking blend (or white whole wheat flour)
  • 1 tsp baking soda
  • dash salt
  • 1/2 tsp cinnamon
  • 1/2 cup apple butter
  • 3/4 cup sugar
  • 1/4 cup pure maple syrup
  • 3 tbsp unsweetened vanilla almond milk
  • 2 tsp pure vanilla extract
  • For the coating:
  • 1/4 cup sugar
  • 1/4 tsp ground ginger
  • 3/4 tsp ground cardamom
  • 1/4 tsp cinnamon
  • pinch cloves
  • pinch ground nutmeg

Instructions

  1. Preheat oven to 350. Line 2 large baking sheets with parchment paper or silpat.
  2. In a medium bowl, whisk together baking blend, baking soda, salt and cinnamon. Set aside.
  3. In a large bowl, beat together apple butter,sugar, maple syrup, and almond milk until well combined. Add vanilla, then add dry ingredients and mix until well combined.
  4. In a wide, shallow bowl, combine ingredients for the coating. Lightly spray hands with nonstick spray, then roll dough into one inch balls. Roll in the sugar mixture to coat completely, then transfer to baking sheet. Repeat with remaining dough.
  5. Bake for 10-12 minutes, until the edges are lightly browned. They may look underdone, but do not over bake. They will set more as they cool. Let stand for 5-10 minutes, then transfer to a wire rack to cool completely.

You see, our New Years Eve was realllll exciting. I had stopped drinking for taper (or I had said I was, then had a glass of champagne, then went to a wedding 2 weeks later, and well, ya know…), and we were all exhausted from the holidays. We went to a friends house, watched Looper (Matt’s choice) which I didn’t like at all, then watched Burlesque (my choice) which never gets old if you ask me.

I’m not sure which part of my evening was better: these cookies, or Cher’s You Haven’t Seen the Last of Me. It’s a really tough choice, so I will say the best part of my evening was eating my weight in these cookies while watching Cher sing her heart out during her 11 o clock number.

Fresh out of ideas from my overkill holiday baking, I hit up my girl Sally’s site for some inspiration. I knew I was craving something with chocolate and peanut butter, and I had some peanut butter chips I’d been wanting to use, so I looked for a base chocolate cookie recipe.

I wasn’t surprised that Sally’s cookies delivered (her recipes are amaaaaazing), but I was pretty blown away by just how amazing these cookies were! They had the perfect flakey brownie top, and the middle was rich and gooey like a perfect batch of brownies, but in my favorite baked good. Can you tell cookies are my favorite thing to make? I think my recipe page speaks for itself. šŸ˜‰

The peanut butter chips add the perfect touch, and we all know that chocolate and peanut butter is the best combination since pb&j. Steve also said more than a few times that these were “the best cookies I’ve ever made”, and since we all know how many cookies I make, you know these are a must try!

 

Peanut Butter Chip Brownie Cookies

yield 2 dozenĀ 

adapted from Sally’s Baking Addiction

  • 1/2 cup gluten-free baking blend (or white whole wheat flour)
  • 2 tbsp unsweetened cocoa powder
  • 1/2 tsp baking powder
  • dash salt
  • 4 oz dark chocolate, melted and cooled
  • 1 egg
  • 1 tsp vanilla extract
  • 2 1/2 tbsp apple butter
  • 1/3 cup brown sugar
  • 2 tbsp sugar
  • 1/2 cup peanut butter chips

Directions:

  1. In a medium bowl, whisk together baking blend, cocoa powder, baking powder and salt. Set aside.
  2. In a large bowl, beat together chocolate, egg, vanilla, apple butter, and sugars until well combined, then slowly beat in dry ingredients until just combined. Fold in peanut butter chips. Cover and chill for 30 minutes.
  3. Preheat oven to 350. Line 2 baking sheets with parchment paper or silpat. Use a small cookie scoop to transfer dough to prepared cookie sheets. Use a small piece of parchment paper sprayed with nonstick spray to lightly press down dough balls to flatten slightly (they don’t spread when they bake, so if you don’t flatten them, you will end up with round cookies).
  4. Bake for 10 minutes until just set. Let stand for 10 minutes, then transfer to a wire rack to cool completely. Store in an airtight container for one week (these cookies stay pretty darn soft and gooey for days!).

Like the way my dad is still always buying me white chocolate kit kat bars because they were my favorite when I was a kid. They still remind me of my dad. The first time I ever had a black and white cookie was when my friend Lisa and I split one at Chompies.

It was love at first bite. The soft, cake-like cookie was absolute perfection. It was so huge we had to eat it with a fork! Ever since, any time I’m in NYC, all I want is a black and white cookie. I had my heart set on one when I was there in November, but it never happened, and so I decided I was going to need to make it happen in Arizona.

The homemade version of this deli classic was everything I dreamed it would be! Soft, fluffy, cake-like cookies topped equally with light, white powdered sugar glaze and its rich, chocolatey counter part. It truly is the ultimate flavor combination.

Black & White Cookies

adapted from Smitten Kitchen

yield approx. 3 ½ dozen

  • 1/3 cup sugar
  • 1/2 cup unsweetened applesauce
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon lemon extract
  • 1 and 1/4 cups whole wheat cake flour
  • 1 and 1/4 cups white whole wheat flour
  • 2 tbsp cornstarch
  • 1/4 tsp baking powder
  • dash salt
  • 1 and 1/4 cup unsweetened almond milk
  • 2 cups powdered sugar
  • 2-4 tbsp hot water
  • 1 and 1/2 ounces unsweetened chocolate, melted
  • 1 tbsp unsweetened cocoa (optional)

Directions:

  1. Preheat oven to 375. Line 2 baking sheets with parchment paper or silpat.
  2. In large mixing bowl, combine sugar and applesauce and extracts until combined.
  3. In medium bowl, whisk together flours, baking powder, cornstarch and salt. Add half of the dry ingredients into applesauce mixture, followed by milk, then remaining dry ingredients. Mix until incorporated, scraping down the sides of the bowl when necessary.
  4. Use a small cookie scoop to drop the dough 2 inches apart on prepared baking sheets. Bake 15-18 minutes until edges begin to brown. Cool completely.
  5. To make the frosting, place powdered sugar in a medium mixing bowl. Slowly, mix in hot water 1 tbsp at a time, until icing has reached your desired consistency. Be careful—a little bit of liquid goes a long way with powdered sugar!
  6. Spread icing on half of the flat (bottom) side of each cookie. Once all cookie halves have been half frosted, add melted chocolate to remaining frosting. To make the ā€œblackā€ darker, you may add in 1 tbsp of unsweetened cocoa if desired (I did). If icing appears too thick, add an other tbsp. of hot water.
  7. Frost the remaining half of the cookies with the chocolate frosting. If icing becomes dry, just whisk in a little bit of extra water—it can dry up pretty quickly, and I had to do this a few times.
  8. Let frosting set and serve immediately or store in an airtight container for 3-4 days.

In fact, when I made them for our first Ragnar team meeting, I almost didn’t serve them because I didn’t love the look, but as I kept reaching over, and over, and over for the pieces of the uglier ones I planned to throw away, I realized they were so delicious, I just had to save them, and post about them, pretty or not.

I don’t think I’ve mentioned it yet, but this February I will be running Ragnar Del Sol with 11 other amazing ladies! The line up includes Nicole, Karla, Melissa, Megan, Tara, Stacey, Jaime, Bety, Jennifer, Jenn, and Kelli. I am sosoSO excited! We had our first official meeting a couple of weeks ago, and did a potluck at my house, so of course I called dibs on making dessert. šŸ˜‰ Tara and Jaime don’t eat gluten or dairy, so I wanted to make something that everyone would be able to enjoy.

So I did end up serving my visually-challenged cookies, and I’m even sharing them with you, because I love them. They are so chewy, and packed with flavor. In true Ari style, there is definitely a lot going on, which leads to my new longest title ever (I think?), but it all comes together perfectly in a way that rather than tasting each component, you taste the combination as a whole.

Peanut Butter Oatmeal Cookies with Dark Chocolate, Cherries & Coconut #vegan #glutenfree

Peanut Butter Oatmeal Cookies with Dark Chocolate, Cherries & Coconut

  • 1 tbsp coconut oil, melted
  • 3 tbsp apple butter
  • 1 cup natural peanut butter
  • 1 cup brown sugar
  • 1/3 cup sugar
  • ½ cup unsweetened almond milk
  • 1 and 1/2 tsp vanilla extract
  • 1 and 1/4 tsp baking soda
  • 2 tbsp cornstarch
  • dash salt
  • 1/3 cup reduced fat unsweetened shredded coconut
  • 3 cups raw oats (use gluten-free if you care about that sort of thing)
  • 6 oz good quality dark chocolate, chopped into chunks (I used 2 bars—a coconut dark chocolate and a sea salt dark chocolate)
  • 3/4 cup sweet cherries, pitted and chopped

 

Directions:

  1. Preheat oven to 350°F. Line 2 baking sheets with parchment paper or silpat.
  2. In a large bowl, beat together coconut oil, apple butter, peanut butter, and sugars until smooth. Add almond milk, vanilla, baking soda, cornstarch, salt, and coconut, and beat until well combined. Fold in oats, followed by chocolate, cherries and coconut.
  3. Use a small cookie scoop to drop batter onto prepared baking sheet about 2 inches apart (these spread quite a bit).
  4. Bake for 12-15 minutes until golden brown around the edges. Cool completely on baking sheet before transferring to serve.

**Notes: These cookies are very sticky. I don’t recommend sealing them for storage. You also don’t want to crowd them. They work best unstacked in a large Tupperware with the lid resting on top, but unsealed.
