Have I ever told you about how my husband refuses to use the correct name for the cooling rack? He insists on calling it the “drying rack”, and whenever I ask him to get out the cooling rack, he corrects me. And every time I make sure I let him know that he’s wrong. The drying rack is for dirty dishes; the cooling rack is for delicious baked goods.

At this point he (obviously) knows the difference, but I’m pretty sure finding ways to annoy me is his favorite past time. In fact, I’m pretty sure everyone who knows me gets a deep sense of joy out of getting a rise out of me. Probably because I make it so easy. I am the first one to get all fired up about things that absolutely don’t matter. I think they call that “dramatic”.

So, this morning I made donuts. I never make things the day I post them, but this is what happens when I sign up for things. I forget all about them until, like, the day before, and then I’m like “Oh crap, I have to make donuts”. Anyway, I made donuts, argued my husband about the term for the rack where I placed the donuts, ate the donuts (totally the best part), and, well, here I am. Sharing donuts with you.

Chocolate Donuts with Orange Glaze {gluten-free}

This month’s theme for The Recipe Redux is good luck foods for the new year. Apparently, I live under a rock because I didn’t even know that was a thing, but luckily Google told me that round foods symbolize good luck, and in my opinion chocolate always means good luck, so I made you round, chocolatey good luck charms, and they are unbelievably good. They are the softest, fluffiest donuts I have ever made, and they are 10 million times better than so many of the dry, deep-fried cake donuts I’ve tasted before. Seriously, I would choose these instead any day, and I am usually one that believes the deep fryer automatically makes everything taste better. 😉

Chocolate Donuts with Orange Glaze {gluten-free}

The bright orange flavor of the glaze is the perfect contrast to the rich chocolate, and the recipe all comes together in about half an hour, so it’s easy to make at the last minute if you have guests, and want to give them a little treat. We had my family over for brunch this morning, and everyone was super impressed with these! My mom kept talking about how “professional” they were. Then my brother proceeded to eat 3. I don’t blame him.

Prep Time: 15 minutes

Cook Time: 12 minutes

Total Time: 35 minutes

Yield: 2 dozen

Serving Size: 1 donut

Chocolate Donuts with Orange Glaze

Rich, fluffy, chocolatey donuts topped with a smooth, bright, citrusy orange glaze. The perfect flavor combination.

Ingredients

  • 4 oz dark chocolate
  • 1 tbsp coconut oil
  • 1 1/4 cup gluten-free baking blend (or white whole wheat flour)
  • 1/2 tsp baking soda
  • 1 tsp cornstarch
  • dash salt
  • 1/2 cup brown sugar
  • 1 egg
  • 1/2 cup reduced fat buttermilk
  • 2 tbsp applesauce
  • 1 tsp vanilla extract
  • For the glaze:
  • 1 heaping cup powdered sugar
  • 4-6 tbsp fresh orange juice

Instructions

  1. Preheat oven to 325. Spray donut pan with nonstick spray. Set aside.
  2. Place dark chocolate and coconut oil in a small microwave-safe bowl. Microwave on increments of 30 seconds stirring after each until melted. Let cool while preparing other ingredients.
  3. In a medium bowl, combine baking blend, baking soda, cornstarch and salt. In a large bowl, beat together brown sugar, egg, buttermilk, applesauce and vanilla. Slowly beat in melted chocolate, then beat in dry ingredients until just combined.
  4. Fill donut molds about 3/4 and smooth out with a spoon. Bake for 11-13 minutes until set and donut springs back when gently pressed with your finger. Place donut pan on a wire rack and cool completely. Once cooled, remove from pan.
  5. To make the glaze, place powdered sugar in a medium bowl. Slowly add orange juice 1 tbsp at a time stirring constantly until glaze reaches desired consistency. I went with a thinner glaze for this donut. Thickness will depend on liquid added. It is important to go slowly and mix thoroughly before adding more liquid. If you find you glaze is too thin, add more powdered sugar until it reaches your desired consistency. Drizzle glaze onto donuts and let set until dry, about 10 minutes. Store in an airtight container for up to 5 days. Donuts will stay fresh best if you store them unglazed and glaze before serving.

Up until last year, I was NOT a cranberry sauce believer. I would never touch the stuff, and I sure as heck wasn’t serving it up at my Thanksgiving table! Then I had this sandwich at one of my favorite lunch spots called the gobbler, and it changed my life. Real cranberry sauce. Not some gross, weird jelly from a can. It was amazing!

Okay, so last year since I didn’t know anything about making my own cranberry sauce, I followed a very simple recipe from Table for Two with the intentions that I would make my own recipe the next time. Except it turns out that Julie’s recipe was perfect in every way, so I kept it the same. I add a tablespoon of bourbon to mine (at the same time I put everything together on the stovetop), but otherwise I follow her recipe exactly. I tried adding less sugar, but it was….not worth it. When I was a little girl, my brother’s mom (yeah, my family is hard to explain…she’s not my mom, or my step mom…) always kept the creamsicle ice cream in the house. You know, the swirl between the orange sorbet, and vanilla ice cream? The one that is 100x superior to just the bar with the ice cream on the inside? She always had it, and I always finished it. She probably never got more than a bowl full, and I didn’t even live there.

There is something so refreshing about the bright, citrusy, orange flavor against the smooth and creamy vanilla that is just about perfect in every way. Great on their own, better together.

I’m a little obsessed with stuffing cookies. I mean, I love a good chocolate chip cookie, but it is almost always better if all of the chocolate (or white chocolate as the case may be) is contained to the center, so that when you bite into the cookies you have the same experience as, say, a jelly-filled donut. And if you don’ know it’s in there, you get an AWESOME SURPRISE!!

These creamsicle cookies are dangerously addictive. The cookie is soft and chewy, and the white chocolate filling stays perfectly creamy, even after the cookies have cooled. In fact, these are a rare cookie case when they taste BETTER after cooling completely. They come out slightly underdone, and need about a full hour after that to set, and cool completely. I mean, I was impatient, and I still loved them right out of the oven, but it wasn’t until I had one the next day that I fell deeply, deeply in love. In fact, the second batch didn’t even make it past the filming day. They were that good.

Orange Creamsicle Cookies

Prep Time: 40 minutes

Cook Time: 10 minutes

Total Time: 50 minutes

Yield: 12-16 cookies

Serving Size: 2 cookies

Orange Creamsicle Cookies

Ingredients

  • 1 1/4 cups white whole wheat flour
  • 1/2 tsp baking powder
  • dash salt
  • 1/2 cup sugar
  • Zest of one orange
  • 1/2 cup reduced fat cream cheese, softened
  • 1 tbsp fresh orange juice
  • 1 large egg white
  • 4 oz good quality white chocolate squares or chopped into large chunks

Instructions

  1. In a medium bowl, whisk together flour, baking powder and salt. Set aside.
  2. In a large bowl mix together sugar and orange zest. Then beat in cream cheese, egg white, and orange juice until combined. Slowly, beat in dry ingredients until combined, scraping down sides of the bowl as necessary. Refrigerate dough for 30-60 minutes.
  3. Preheat oven to 350. Roll cookies into 1? balls, then stuff with a white chocolate square. Re-roll into 1? ball, making sure all the white chocolate is covered. Repeat with remaining dough.
  4. Bake for 9-11 minutes until golden. Cool completely on baking sheet. Store in a loosely covered container for 5-7 days.

I thought I hated Chinese food. Like, the other night we had to go out for Chinese food for my brother’s birthday, and I was all bent out of shape about it. I told Steve that I hate Chinese food, and I was going to eat at home first. I’m a really pleasant human sometimes.

I knew I was going somewhere with the whole Chinese food business. Turns out it’s delicious. I mean, orange chicken is about as Americanized as you get. It’s almost like calling Domino’s pizza Italian, but whatever. It’s delicious. And usually deep fried, and overly sticky sweet. I don’t like that kind of orange chicken. The kind you get at Panda Express? Ew, gross. I used to, but not the grease and stickiness make my mouth feel funny.

This orange chicken is sweetened with real orange juice and honey for a true orange flavor. It’s coated in flour, then browned on the stove top so that it can hold on to all of the delicious juice, then transfered to the crockpot where it cooks the rest of the way while you go about your day.

The flavors are bold and satisfying. It’s what you would imagine orange chicken to taste like if you had never tried the sticky fried version. So if you’re a lover of the Panda Express kind, it won’t be an exact match, but I promise you will still love it!

 

Healthy Crockpot Orange Chicken

adapted from Team T Adventures via Six Sisters Stuff

yield approx 6 servings

  • 1-2 tsp coconut oil
  •  3 boneless skinless chicken breasts, cubed
  • 3 tbsp whole grain flour of choice (whole wheat, brown rice, etc.)
  • 4 large oranges
  • 1 1/2 tsp balsamic vinegar
  • 3 tbsp low sugar ketchup
  • 1/4 cup honey
  • 2 tsp sriracha (optional, but recommended)
  • brown rice and steamed broccoli for serving (optional)

Directions:

  1.  Heat coconut oil in a large pan over medium heat. Place flour in a large shallow bowl. Dredge cubed chicken in flour to coat then transfer to cooking pan. Brown chicken, then remove from heat. Don’t worry about fully cooking chicken–it will finish in the crock post. You want it just browned.
  2. In a medium bowl, zest 2 oranges, then juice all 4. Add vinegar, ketchup, honey, and sriracha. Whisk together to combine.
  3. Transfer cooked chicken and sauce to crockpot, and cook on low for 4:30-5 hours.
  4. To serve, place cooked chicken on top of brown rice (or just on your plate), then spoon over an extra 1/4 cup or so of sauce–trust me, you’ll want extra! Store leftovers in the refrigerator for up to 5 days.

Chocolate Frosted Orange Donuts

I have something really embarrassing to tell you.

So I pretty much never know the correct way to store my baked goods. Either I wrap it all up super close in an airtight container when it is still entirely too warm resulting in a big gooey mess of cookies/cupcakes/etc. basically unbaking themselves; or I leave everything out chillin’ with all the breezy air flowing freely throughout my house resulting in stale baked goods in something like 48 hours.

It is a particularly sad experience to spend 75% of your life baking cookies, only to end up not being able to enjoy them the next day. Life is hard when you have a food blog.

Okay, but we’re not even to the embarrassing part yet. This happened when I chose option B, letting my baked goods hang out (read: I was lazy, and didn’t store anything properly). You see, this became a problem because I was unbelievably head over heels for these donuts. That’s part of the reason I didn’t store them in the first place. They were so tempting. I was scared to keep them.

Well, my plans to trick myself into not eating all of the donuts failed miserably when I found myself picking at the lone stale donut still standing 3 days later. That’s the embarrassing part. But if you baked  the most perfect tasting orange donuts that were melt-in-your-mouth soft, and covered with sweet chocolatey goodness, you would be picking at the stale leftovers too.

Oh, and by the way, they’re vegan, and gluten-free. 😉

 

Chocolate Frosted Orange Donuts

yield 8-10 donuts

For the donuts:

  • 2 cups almond meal
  • zest of 1 orange
  • 3 tbsp corn starch
  • 3/4 tsp baking powder
  • dash salt
  • 3/4 cup unsweetened almond milk
  • 1/4 cup honey or agave
  • 1/3 cup orange juice
  • 1/2 tsp orange extract

For the frosting:

  • 1 cup powdered sugar
  • 2-4 tbsp hot water
  • 1 and 1/2 ounces unsweetened chocolate, melted

Directions:

  1. Start with the donuts. Preheat oven to 350 degrees. Spray donut pan with nonstick spray. Set aside.
  2. In a large bowl, whisk together almond meal, orange zest, corn starch, baking powder and salt. Stir in almond milk, honey/agave, orange juice and orange extract until combined.
  3. Fill donut molds about 2/3 – 3/4 full. Bake for 12-16 minutes until golden and set. Let stand for 5-10 minutes, then transfer to a wire rack (I flipped mine over onto the rack and they came right out) to cool completely.
  4. To make the frosting, place powdered sugar in a medium bowl. Slowly add in water 1 tbsp at a time, stirring constantly, until it reaches a spreadable glaze consistency. Stir in melted chocolate. If glaze becomes too thick, add an other tbsp hot water. Spread glaze on top of cooled donuts.
  5. Top with extra orange zest and/or sprinkles if desired. Store in an airtight container (so you don’t pick at stale donuts) for up to one week.

**Note: If while spreading the glaze it becomes too stiff, stick the bowl in the microwave for 10 seconds, and it will thin out again.

Orange Cranberry Almond Meal Muffins

Have you heard? After Thanksgiving, cranberry is the new pumpkin.

Oh and peppermint is the new sweet potato. Trust me, that’s coming too. I’m pretty obsessed with the chocolate peppermint combination, so it’s only a matter of time. But for now, I’m in cranberry land.

Let me just say, I’m usually pretty skeptical about any type of “muffin” that doesn’t include flour. I’m a girl who likes her bread. Thick, doughy, gluteny bread is a staple in my diet, and I’m not ashamed.

I had my reservations about just using almond meal. I thought they would come out dense and brick-like. I didn’t think there was any way I could have a perfect fluffy muffin with no flour.

Turns out, almond meal muffins are basically perfection. Soft, fluffy, hearty and filling! I hate when you try to eat a “muffin” for breakfast-and by muffin I mean a glorified cupcake that’s missing the frosting-and 5 minutes later you’re hungry again because you just ate the equivalent of a bowl of ice cream for breakfast. These muffins could actually serve as an on-the-go breakfast. That is, if you’re not me and don’t feel the overpowering urge to eat half your calories before noon.

I don’t know what it is, but I always wake up feeling like a ravenous beast. You know those people who skip breakfast? I DON’T GET IT!! So, you know, I’d probably pair one of these up with, like, half a dozen eggs, but if you’re a normal human, you could just grab one on your way out the door, and be good to go.

The sweet and tart orange and cranberry flavors meld perfectly with the hearty nutty flavor to make the perfect breakfast treat that you can share with just about anybody!

Orange Cranberry Almond Meal Muffins

yield 10-12 muffins

adapted from Bran Appetit

  • 2 cups almond meal
  • 3 tbs corn starch
  • 3/4 tsp baking powder
  • dash salt
  • 3/4 cup unsweetened almond milk
  • 1/4 cup honey or agave
  • 1/3 cup orange juice
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract (optional)
  • 1/2 cup dried cranberries
Directions:
  1. Preheat oven to 350 degrees. Line muffin tins with paper liners. Set aside.
  2. In a large bowl, whisk together almond meal, corn starch, baking powder and salt. Stir in almond milk, honey/agave, orange juice and extracts until combined. Fold in dried cranberries.
  3. Fill muffin tins about 2/3 full. Bake for 20–25 minutes until golden and a toothpick inserted in the center comes out clean.

Orange Chocolate Lava Cookies

Have you ever had one of those big chocolate oranges? I always thought they were weird, but it turns out orange and chocolate together is brilliant and delicious. I guess those chocolate orange people were right all along 😉

Is it just me, or do things seem fancier when they have a filling? It’s pretty deceptive, really. These are just as easy to make as chocolate chip cookies, but it’s so much more fun to take a bite and have melty, gooey, rich chocolate surprise you in the middle.

Apparently this chocolate was too impatient, and couldn’t wait to be a surprise. Silly chocolate.

I love surprises. Poor Steve…I always tell him “I require a lot of surprises.” Whether it’s coffee, fro yo (my #1 fav surprise), or a note, it just makes me happy. 🙂

But ya know what I do not prefer? When someone tells you they have a surprise for you, and then refuses to tell you what it is!! What is that about? If you have a surprise, then just surprise me! Don’t tell me you’re going to surprise me! I can’t deal with not knowing things, people!

Clearly, I am the easiest person on Earth to be married to. I bet you’re all sad that you didn’t scoop me up first. Sorry guys. I know it sucks.

But seriously, I like to think that my baking at least slightly makes up for the fact that I’m kind of an obnoxious human being. I mean, I still have friends, so it must be the cookies.

This is where you compliment me, and tell me I have a personality that shines like a star, or something cheesey like that. Ready, go!

Okay, back to the cookies, because these cookies are ridiculous. Sweet, citrusy, chocolatey, tons of flavors and textures all fitting together to make up cookie heaven.

I’m on a bit of an orange dessert kick it seems. Which is funny, because I don’t even like actual oranges. Or orange juice. But I do like these…and also these.

 

Orange Chocolate Lava Cookies

  • 1 1/4 cups gluten-free baking blend (or white whole wheat flour)
  • 1/2 tsp baking powder
  • dash salt
  • 1/2 cup granulated sugar
  • 1 tbs orange zest
  • 1/4 cup fat free cream cheese, softened
  • 1/4 cup apple butter
  • 1 tbs fresh orange juice
  • 1 egg white
  • 4 oz dark chocolate (small squares or coarsely chopped)
For the glaze:
  • ½ cup powdered sugar
  • 1-2 tbs orange juice
Directions:
  1. Preheat oven to 350. Line a large cookie sheet with parchment paper. Set aside.
  2. In a medium bowl, whisk together baking blend, baking powder and salt. Set aside.
  3. In a large bowl mix together sugar and orange zest. Then beat in cream cheese, apple butter, egg white, and orange juice until combined.
  4. Beat dry ingredients into wet until combined, scraping down sides of the bowl as necessary,
  5. Roll cookies into 1″ balls, then stuff with a 1/4 tsp size chunk of dark chocolate (eye ball it–you want to make sure it is bigger than a chocolate chip, but that the dough can still cover it completely). Re-roll into 1″ ball, making sure all chocolate is covered. Repeat with remaining dough.
  6. Bake for 10-12 minutes until golden. Let stand for 3-5 minutes on baking sheet before transferring to a wire rack to cool completely.
  7. Meanwhile, in a small-medium mixing bowl, whisk together powdered sugar and 1 tbs orange juice. Slowly continue to add more orange juice (and I mean very slowly. A little bit of liquid goes a long way with powdered sugar) until desired drippy consistency.
  8. Dip tops of completely cooled cookies into the glaze, then let stand to set on a flat surface.

Orange Creamsicle Cupcakes

Perhaps you are lucky to live somewhere that it has not yet reached 100 degree temperatures. If so, talk to me in December 😉

Because it is already nearing oppressively hot here in Phoenix, I figured it’s only a matter of time before I stock up on sugar free creamsicles and start eating about 10 a day. That’s not a joke. Lisa, how much do we love sugar free popsicles? Well, these may have more than the 20 calories that sugar free creamsicles contain (wouldn’t it be awesome if the didn’t!!), but they are ridiculously delicious, and that’s more important, right? 😉

I love when cupcakes get that perfect dome top. It makes me so happy! Ahhh, the little things.

I was surprised at how perfectly the orange and cream flavors of one of my favorite frozen treats translated into a cupcake. I am a total ice cream person, but I might even dare to say I like the cupcake version better!
