Birthday Celebration Part 3

I know, I know…I’m sorry! I ended up having a lot of smaller celebrations this year rather than one big one, and I must confess, I have 2 more this weekend. My actual birthday started out awesome! I met Jason at the park for a 3 mile run. He is getting back into training and it was awesome to run with him and chat, and get a chance to hang out just the two of us. After our run, I met up with Kara and headed out to Liberty Market for breakfast. In case you didn’t know, they give you free food on your birthday! You know me, I don’t turn down free! Confession….One year I seriously went to as many places as possible to see how many things I could get for free. That’s super embarrassing now, but I still appreciate the whole not having to pay on my special day 🙂

I started with an almond soy latte.

It's no La Grande Orange latte, but it was still delicious.

Kara got this super cool “drink” that was shots of espresso with milk and a raw sugar. It was super strong, but delicious!

For breakfast, I ordered an egg white & veggie scramble that came with potatoes and the star of the meal–the most delicious biscuit!!!

This biscuit tasted like they dipped it in butter before they baked it! And, they probably did....

I had been wanting to try Liberty Market for a while, and I have to say I loved it! I really want to try it at lunch or dinner time too. After breakfast, I headed home to get some work done before heading out to teach. I had a small break in the middle of my day that I got to spend with Nicole!! She had emailed me a couple of days before about how Yogurtland was giving away free yogurt between 4-7 that day and asked if I wanted to go with her. Free fro yo on my birthday?! OKAY!!!!!

Nicole totally surprised me by bringing me flowers! She is such an amazing friend, and honestly if even nothing ever comes of this blog, I will be beyond happy that it has given me some absolutely incredible friends.

After yogurt, I headed out to tech rehearsal, and spent the remainder of my birthday doing what I love with an awesome group of kiddos. Sure, I wasn’t thrilled to be at work, but I seriously love this group of kids so much that it made it pretty awesome.

And then….!!!! For my final present from life, after many, many denials, my pb&j cookies made it onto Food Gawker!!!!

The next day, this little blog had it’s busiest day so far 🙂 Happiness all around!

Birthday Celebration Part 2

Sunday morning, I had a very exciting date with my friend Christina for a special 90 minute spin class with Linda AKA the best spin teacher ever. I recently found out that the first Sunday of every month, Linda generally does a special 90 minute class and I was super excited! Poor Christina–it was her very first spin class! But she did so AWESOME! She was a champ and made it the entire 90 minutes, after several people had gotten up to leave–get it girl!! I ended up going 34.5 miles that class! I was soooo excited when I saw the screen pass the 30 mile point! Why oh why can’t every spin class be 90 miniutes??

After class I had a few minutes to squeeze in a cup of coffee with Christina (this girl and I have been friends since preschool!) before having to run home. Steve told me I needed to be ready to go by noon and class ended at 10:30. I like to cut things close 😉 At around noon, Hermano, Jason and Nacho arrived and I was told the plan was to ride our bikes to Dilly’s Deli. About 14 miles round trip. Well, okay then! I am not one to say no to outdoor exercise with people I like!

So we were off!

We arrived about 40 minutes later at Dilly’s for lunch. I was starving and couldn’t wait to get my hands on one of their yummy sandwiches!

And here, I am eating the sandwich. Cute, right?

After lunch, we rode home. Oh my gosh, by the end my butt was soooo sore! Sorry for the TMI, but those seats are rough! Steve and I had a little down time, so we went to Goodwill to get some props to improve our food photos, then went to Lululemon because I have gift cards and there is a skirt I’ve had my eye on! Unfortunately, they only had the skirt I wanted in one size and it was not the right one 🙁 We came home, made pb&j cookies, and then we were off to meet up with Jason, Nacho and Bethany for dinner!

Steve wouldn’t tell me where we were going to dinner. I had an idea that it would be somewhere from my list of restaurants I want to try, so I was excited when we pulled up to Gallo Blanco. Unfortunately, they decided to close for the day and not put it on their website or answering service. Jerk faces. We ended up heading to Delux Burger which has also been on my list.

I was very happy with the beer selection 🙂

In case you've never read the blog before, I like my beer dark and sweet! This was half hazlenut brown and half double chocolate stout. Like nutella. Yummmm.

The food was good, but not amazing. The fries were reallllllyyyy good. We shared a basket that came in a mini shopping cart and they were sweet potato fries with this super yummy mustard sauce. The burger however, was just good. Not bad, but if I were to go back, it’d probably be for just beer and french fries, which is super nutritious in case you didn’t know.

At the end, the waitress surprised by bringing out a sundae with a candle!

Nope, I'm not excited at all.

Luckily, everyone helped me out with this thing! I knew there was still cake at home (oy vey), and this thing was huge! Also, I almost never eat real ice cream. It’s one of those things I just can’t justify, but this was delicious and even with 5 of us, we couldn’t finish it, so I don’t feel so bad 🙂

After dinner, we headed back to Jason’s house to break out the birthday cake! I had requested my dream cake months ago, and Steve remembered!! A fro yo cake from my very favorite fro yo spot Yogurtology!!! I requested their oatmeal cookie flavor with nutella–my favorite!!!

Amaaaaazzzzing!

This cake had a cookie crust, a layer of nutella on the bottom, and then the oatmeal cookie fro yo on top. It was even more delicious than I had imagined!! And you know what? It cost about $11. Friends, if you’re not going to make the cake yourself, get it from Yogurtology! I still have a couple pieces left, and I do not plan on sharing 😉

Birthday Celebration Part 1

Hi friends. Guess what? I’m officially getting old. As of Monday, I have joined the late 20s club. Waaahhhh. Good thing I have awesome people in my life who make getting old fun 😉 But seriously, I LOVE birthdays! They are a huge deal in my family, and every year I look forward to it and drag on the celebrations as long as possible. This year my celebration began on Saturday….with a BIKE!!!!!

Super, awesome, amazing birthday present!!!

I’d been really wanting one ever since Steve got his, so Steve, Bethany, Jason and Nacho all chipped in and got me one for my birthday!!!

But let me tell you, the last time I had actually been on a bike was probably at least 15 years ago, so I was a little scared. I tested out a couple in their parking lot, and didn’t die–a good sign! This one felt significantly better, and I liked that I could feel the road underneath me, so I went with it. Within an hour, Steve and I were on our bikes, taking our first ride to my mom’s house. I was super nervous and yelled at him multiple times, but I guess because he was being nice for my birthday, he just kept being nice, and was the perfect teacher!

We made it safely to my mom’s where she was hosting a family birthday dinner.

Then it was time for more presents!! YAY!! I LOVE presents…not just for the reasons you would think, but I love seeing what people choose to give me. So often, I receive these incredible and thoughtful gifts and they always mean the world to me. Anyone can go out and buy a present, but the people in my life do it with thought and care, and that’s the part that really means a lot to me!

My mom says this book is basically 50/50, but with young people. I can't wait to read it!

COOKIE RECIPES!!!!

After all the present opening, it was time for dessert!! I knew I was getting a cake the next day and an other one later this week (yeah, healthy living, blah blah blah, CAKE!), so I suggested we all go out for gelato instead of having more cake. Ice cream is my favorite anyway. We went to Gelato 64 and I had a super delicious birthday treat!

It was so wonderful to spend some time with the family and celebrate with the people responsible for my being alive in the first place! Special thanks to my mama for hosting such a fabulous and amazing night!!!

Peanut Butter & Jelly Cookies

You guys. You don’t even understand. I think this might be my favorite thing I have ever made. Ever. I would rather eat 1 of these than 10 full fat Paradise Bakery cookies. I took one bite and between the perfectly crunchy outside, softy doughy inside, and warm sweet jelly, I was pretty much in cookie heaven. I think this honey apple butter is pretty much the best butter substitute I have ever used. Thanks Carolyn!

I also made these start to finish in about half an hour. They were so easy. It was one of those rare baking times where everything just turns out the way you want it. Happy birthday to me!

Peanut Butter & Jelly Cookies

yield approx 16 cookies

  • 1/4 cup apple butter
  • 1/2 cup peanut butter
  • 1/4 cup packed dark brown sugar
  • 1/4 cup + 1 tbsp turbinado sugar
  • 1 1/2 tbs unsweetened vanilla almond milk
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • dash salt
  • 3/4 cups white whole wheat flour
  • approx 8 tbsp jelly/jam of choice (I used reduced sugar grape, no sugar added blackberry, and fig butter and I loved all 3)
  • 2-3 tbs whole wheat graham cracker crumbs

Directions:

  1. Preheat oven to 375.
  2. In a medium bowl, beat apple butter, peanut butter, sugars, almond milk and vanilla.
  3. Beat in baking soda and salt. Beat in flour until combined.
  4. Use a cookie scoop or sprayed tablespoon to drop cookies onto a large baking sheet.
  5. Using your thumb, press down into the center of each cookie dough ball. Fill each center with jelly of choice. Sprinkle all cookies with graham cracker crumbs
  6. Bake for 10 minutes. Let stand for 2 minutes, then transfer to wire rack.

Skinnified Sunday: Samoa Cookie Bars

You know what? I have not bought a single box of girl scout cookies this year. I mean, I won’t pretend that no matter how many copy cats I make, I don’t still want to eat an entire sleeve of thin mints, but I have to say I have really been enjoying the flavors I love + the freshly baked at home taste that no cookie in a box can ever duplicate. I have a confession. I might actually like these better than real samoas! Sometimes the real ones are just a tad too sweet (if that’s even possible) for my taste, and I felt like these don’t taste healthy at all, just more natural in flavors. I taste real coconut and dark chocolate and I love that.

Original recipe:

My swaps:

  • 1/2 recipe
  • Pumpkin and light whipped butter for butter (-fat, -saturated fat, -calories, -cholesterol)
  • Sugar/Splenda combo for sugar (-sugar, -calories)
  • Egg substitute for egg (-fat, -calories, -cholesterol)
  • Extra vanilla (+yum)
  • Unsweetened coconut (It didn’t specify, but it was hard to find just plain ole coconut. -calories, -sugar)
  • Low fat caramel sauce for chewy caramels (-fat, -calories)
  • Grain sweetened chocolate chips for regular, and less of them (-calories, -sugar)

Skinnified Somoa Cookie Bars

yield 16 bars

for the cookie layer

  • 2 tbs turbinado sugar
  • 2 tbs Splenda
  • 1/4 cup pumpkin
  • 2 tbs light whipped butter, softened
  • 2 tbs egg substitute
  • 1 tsp vanilla extract
  • 1 cups white whole wheat flour
  • dash salt

for the topping

  • 1 1/2 cups unsweetened flake coconut, toasted**
  • 3/4 cup low fat caramel sauce
  • 1/3 cup grain sweetened chocolate chips
  • 1-2 tbs unsweetened coconut almond milk (or any milk)
  • dash coconut extract (optional)

Directions:

  1. Preheat oven to 350. Grease 8×8 pan with nonstick spray. Set aside.
  2. In a large bowl, beat butter, pumpkin, Splenda and sugar together. Beat in vanilla and egg substitute.
  3. Add salt and flour and mix until combined. Dough will be slightly crumbly and may not all come together.
  4. Press dough into greased pan, smoothing with a spatula.
  5. Bake for 20 minutes, then place on wire rack to cool completely.
  6. Spread caramel sauce on top, followed by coconut flake.
  7. In a small microwave safe bowl, heat chocolate chips, milk, and coconut extract in increments of 15 seconds, mixing after each increment until melted. Carefully, spread on top of caramel/coconut layer using a spatula.
  8. Freeze for 2 hours for caramel sauce to set, then transfer to refrigerator, or keep frozen if desired.

**I toasted my own coconut by placing it in a nonstick pan over medium-low heat until golden. Careful to stir constantly and do not burn.

Why I Run

Last Friday, I ran 15 miles for the first time ever. I was, of course, thrilled and wanted to post about it right away, but during the run, a million thoughts went through my head that I wanted to write about, so I waited and then we went to Disneyland, and I waited to put my thoughts together, and here we are over a week later and I still haven’t written about it. Whoops.

This run was different because every distance I had done up until this point was clearly in preparation to be able to run 13.1 miles on January 15th. Well, you don’t need to run 15 to know you can run 13. I chose, for no other reason than the fact that I wanted to, to run 15 miles. Crazy? Probably. It’s funny because the first 10 miles went so unbelievably well. This was my first long run since PF Chang’s and I was trying to listen to what the training plans say about taking your long runs nice and slow. Steve even came with me on his bike and rode next to me for the entire distance which was awesome! Around mile 7 I felt so good that I began to even consider going a longer distance (did I mention that I’m crazy?), but of course around mile 10, I started to feel it and get tired.

By mile 13, I just really wanted to be finished, and by mile 14 I was yelling and cursing at Steve asking him why I ever decided to do this in the first place. But then, that made me really thing–why?? I mean, of course I knew a few reasons:

  • I feel awesome and accomplished every time I conquer a new distance or hit a speed goal.
  • It is so much better than any piece of cardio equipment.
  • I love the social aspect of being outdoors with friends and getting my work out in at the same time.
  • It makes me feel like a little bit of a bad ass to walk around saying “Oh yeah, I ran ___ miles today.”

But I also know that none of those are the biggest reason deep down. I started to think about my attitude and feelings towards food, exercise and my body when I began running in October. They were vastly different than they are now. Going out to eat caused me to go into a panic. I meticulously counted every single calorie. My entire view of my body, and sometimes my worth, was based on whatever number the scale read that morning. I was absolutely miserable.

Then I started running. And my number-focused mind started seeing clear numerical results in something other than the scale. Something much more within my control. I am someone who has a hard time believing they have achieved something. It’s like my brain requires evidence. Proof. Facts. I feel like that is how I got so wrapped into what the scale said when I started losing weight. I would get on and see the evidence of my efforts. Until that stopped, and no matter how hard I worked, I had nothing to show for it the scale didn’t show it. Now I have a place where I can see my hard work adding up and paying off. It’s apparent in so many ways, but when I am lacking in confidence and self doubt sneaks in, I still have that proof in numbers that no one can’t argue with that I have accomplished something.

I realized while running that last mile that at moments felt like torture, that more than all of the pain and exhaustion, I felt free. Running gives me freedom. And I realized just how big of a blessing it has been on my life, and how lucky I am to have found something positive that brings me a sense of joy and accomplishment.

Then yesterday I ran 12 miles, and you know what? It really sucked. It was my first long run that I legitimately ended feeling like it sucked. I wore the wrong shorts and had no body glide and by half way through, my inner thighs were rubbed raw and I had to call my step dad to come and pick me up. I thought maybe the little break at the half way point would make the next 6 miles easier, but it made them like a million times harder. By the time I got to my house, the last thing I felt like doing was going back out and running more, but I went out and my legs felt like lead. I had to get my body warmed up all over again and it was already tired, and I was not happy about it.

Then of course my ipod and headphones kept getting tangled in my camelback and falling out and getting in my way, and at one point I literally stopped and repeated the F word about 6 times before giving myself a little pep talk that I had to finish whether I liked it or not, and it would suck a lot less if I could get a freakin attitude adjustment! I told myself to pull it together, and I finished my damn 12 miles, but I was not happy about it. I was grumpy and cranky that it hadn’t gone well, and I felt frustrated and of course on top of all of it, my achilles tendons were hurting worse than they have hurt in a long time. Okay, you get the point, it really sucked.

But….

I finished.

It would have been so easy to give up at the 6 mile mark when I had to come home and change, but I made a commitment, and I remembered all of those feelings that came to the surface the week before, and even though I did not necessarily enjoy this particular run, it was that discovery of why that powered me through, and in the end I felt a different kind of pride. I felt proud for not giving up when I easily could have, and it only further cemented the sense of freedom I discovered the week before.

And that is why I run, and why I think I will always run. Every day I am beyond thankful that I have a body that is capable of carrying me for miles at a time. I am strong, healthy and capable regardless of whether or not I actually ever make it to my “goal weight”. I have bigger and better goals these days!

My Attempt at Speed Training

In case you couldn’t tell by my 10+ min/miles in long distances, I am kind of a slow runner. That’s okay. I am also a very new and inexperienced runner, and for almost the entire time I have been running, my focus has been on endurance and working towards long distance. Now that I know that I can, in fact, run at least half of a really long distance, I want to learn how to do it at the speed of light! I also have pretty much no idea what I’m doing.

The other day, I was reading Monica’s blog when I saw a speed work out her awesome, ridiculously fast friend Margot had given her. It looked really awesome and challenging and I left a comment saying that I wanted Margot to be my friend too. Well, turns out Margot really is the nicest person on Earth, because she graciously offered to give me all sorts of amazing advice with lots of great ideas on how to train for speed. Aside from being overwhelmed by her kindness and willingness to help a sister out, I was so excited to put some of it to use!

One thing I hadn’t totally understood was how to do a tempo run. I just read blogs where people say they did one and there is usually a warm-up mile and some faster ones and a cool down, so I was like “Okay, I run fast in the middle”, but Margot explained that there are lots of different ways to do it (for example to sets of two miles each), and that the “fast” time should be at half marathon goal pace. She also explained that the purpose of these runs is to lower the idea of what your comfortable pace is. That makes sense, because when I do my sprint intervals, it is never something I can maintain. I like the idea of having to do a few miles at a pace that feels fast and figuring out how to maintain that so that it eventually becomes comfortable.

I also read a lot of people suggesting running with faster people. Yesterday I had a running date with my new friend Ashley who works in my physical therapy office. The plan was to do a mile warm up, then 3 tempo miles at 9:15, then cool down for the last mile. I had never run with Ashley before, and so towards the beginning I asked what pace she usually runs at and she responded “I usually do about 3 miles at a 7:30 pace.” F. Commence me being scared for my life and certain that I would embarrass myself. I had told her my goals at the beginning so I guess she knew we would be going at snails pace, but I suddenly felt a ton of pressure not to suck.

We completed our warm up at a nice easy pace, then kicked it up and completed mile 2 at 9:13. Right on pace for where I wanted to be. During mile 3, I could feel that we had picked it up a little bit, but I just focused on keeping up and trying to hide the fact that I was already feeling tired and we hadn’t even hit 5k. We finished mile 3 in 8:58, and I was feeling pretty proud of myself, but also worried about maintaining that pace for another mile when Ashley said “Okay, let’s make this one faster!” Yes, coach! Somewhere along this mile, I told her about my 2012 goal of running a 7:59 mile, and that I had never been able to break the 8 min/mi point. She seemed convinced that I could do it sooner than I think, and pushed me into high gear for all of mile 4. So many times I wanted to slow down, or just plain out quit, but having her there pushed me and kept me accountable. We finished mile 4 in 8:07, then I requested a stop to catch my breath before doing a cool down jog for the last 1/2 mile.

Is it just me, or does anyone else hate what the warm up and cool down do to your average pace by the end of the run? It would look so much more impressive with out thoe 10 min/mi paces tacked onto the outside!

So, I’m not sure that actually ended up being a tempo run, but it was definitely a fast (for me) and challenging training run. I kind of hated it in the moment, but I spent the entire rest of the day feeling proud of myself and wanting to tell everyone–the same way I feel after completing a PDR. I am excited that the speed work outs can be so rewarding, and give me that same feeling of awesomeness! I had been a little bummed about feeling like I have to wait until next year to do a full marathon, but this makes me excited to focus on speed and hopefully make some 5K and 10K PRs along the way! I also hope that this means that by the time I do run a marathon, I will be able to do it a decent pace, and that I will feel more prepared.

Until then, I am going to try some more of the ideas super speedy Margot gave me (seriously, this girl just ran a 5K in like 20:20 or something nuts like that!), and continue to force speed demon Ashley to run with me before PT on Wednesdays, and also try to keep running with my speedy friend Nicole!

Disneyland Road Trip Day 3

Monday morning, in full vacation mode, I canceled my alarm as soon as it went off and thought “Well, 3 days off from working out can’t be the worst thing in the world”, and let me tell you, it was an awesome decision. Steve and I had a fabulous lazy morning. He wished me a happy birth-week first thing (I love him) and was being super nice. We finally peeled ourselves out of bed, got our things together and drove up to LA to see my awesome BFFFF Chase!

Chase was one of the first people I became close with when I transferred to UI. He came in my second semester and we just clicked right away, plus we had the awful theatre tech class together so we latched onto each other in hopes of getting through it together. He moved down to LA almost a year ago, but I haven’t seen him nearly as much as I would like considering we’re just a 6 hour drive apart.

We went to see his home which is in a super cute area in West Hollywood–I think? We started with breakfast at Joey’s Cafe. The menu was filled with lots of delicious looking items and lots of healthy choices, so I was super excited! Of course, after I saw something with goat cheese, the other items didn’t stand a chance 😉

Egg white omelet with spinach, sun dried tomatoes and goat cheese. It was delicious.

Steve got a breakfast burrito.

I tested it of course to make sure it was okay for him. It was delicious, but the guacamole tasted like it must have been poisoned so I tried to convince him to give it all to me in an attempt to save his life.

Chase’s was almost as good as mine. If it had goat cheese, it would have totally blown my omelet out of the water!

Honestly, is anything more delicious than quiche? I could just eat the crust and be perfectly content.

After breakfast, Chase took us on a tour to explore the neighborhood.

I love this one! This whole post reminds me of the days when we would sit on Chase's balcony couch and take pictures of ourselves for hours on end. One time we even took a picture to compare whose calves were the most buff. Chase won, I came in second and poor Kyle lost, but watch out Chase--with all my running, my man calves have grown to epic proportions!

It seemed like we had just gotten there when it came time to take Chase back home and start our way back to Phoenix. I was sad to have to say goodbye so quickly, but I’m just glad I got to see him for a little while! It’s been way too long.

The drive back was lots of me singing at the top of my lungs, and lots of me sleeping while Steve drove. Oh yeah, and many more “Are we there yet?!?!?!!”s. Finally, we were back home and I was thrilled to be reunited with some familiar faces!

Disneyland Road Trip Day 2, Part 2

After a full morning and afternoon at Disney, we were happy to get a little time to refresh and get some non touristy food before heading back for the evening. I had read a few of Monica’s suggestions of good local places to eat in the Anaheim area, and after she posted about eating at Slater’s 50/50, I couldn’t get it out of my mind. Once Steve looked at the menu, it was clear that it absolutely needed to happen.

They are most famous for their 50/50 burger which is half ground beef, half ground bacon. That sounds intense. What I loved most was how open the menu was. There were tons of options that included some healthier options like chicken and wheat buns. I am the pickiest person on Earth, so obviously I went with the create your own option.

Grilled chicken, goat cheese, cranberry sauce, greens, tomato and cucumber on rye bread. Basically if goat cheese is ever an option, it ends up on my plate.

Steve created his own too.

Fire beef with every spicy option the menu had pretty much. His spice tolerance is insane!

I started off with more beer, because obviously I didn’t get enough the night before.

I promise, I do not have an alcohol problem.

Before we knew it, our food was delivered.

And we couldn’t not get the sweet potato fries with pumpkin dipping sauce–oh my gosh, must recreate!

Maybe this could be my last meal?

The food was amazing. I got sad when I was full because it all tasted so good! Maybe I should be embarrassed by that? If you tasted it, you’d understand! Definitely the best meal of the trip.

With full bellies, we headed back to the park, anxious to get there for the fireworks!

Then we got the super sad news–the fireworks had been canceled! 🙁 Major bummer. We ended up going into the Disney museum which I had never been in either. It just never interested me as a kid, but I really enjoyed looking at everything this time.

Then we rode Thunder Mountain again, and got to see the castle at night which was beautiful.

After a while, we felt like we’d done everything we really wanted to, so we decided to meet up with Nicole, Lance and Chelle in downtown Disney for some drinks to celebrate Nicole and Chelle’s successful half marathon! Nicole shaved 15 minutes off her previous time and Chelle completed her first half! We spent the remainder of the evening drinking and chatting about everything. Well Nicole and I talked a lot. The rest of the group had a hard time getting a word in edge wise with both of us around. Sorry guys.

It got late before we knew it and we parted ways and headed back to our respective hotels. It was definitely the perfect way to spend a day at Disneyland!

Disneyland Road Trip Day 2, Part 1

Steve and I woke up bright and early Sunday morning and the first thought that crossed my mind was “Nicole’s running right now!!!” I hadn’t realized when we made our plans that it was the same weekend as the Tinkerbell 1/2 marathon, but the stars aligned and I ended up being in the same place as Nicole on her race day! I grabbed my phone to see where she was from her twitter feed, and then Steve and I went to where the race was going by our hotel, but unfortunately we had already missed her. We got dressed, grabbed coffee (obviously) and walked over to the park.

Disneyland is so incredibly nostalgic for me. My dad used to take me every year for my birthday. In fact, one of my 2 very favorite birthdays in my soon to be 27 years of living was when I was in elementary school and I woke up on my birthday (I think I was turning somewhere between 7-9–dad??), and started getting ready for school, but my dad stopped me and told me I wasn’t going to school, then surprised me and took me to Disneyland for the day! I will never forget it. As soon as we got to the gates my heart felt ready to burst! Maybe I’m nostalgic or maybe I it’s that I have the mentality of a 6 year old, but this place just brings me so much joy–it really is magical!!

We got there right as the park opened, so we had no trouble getting on the first few rides. We headed straight to Indiana Jones, then Space Mountain, then stopped in a few shops to get in full Disney spirit.

Is it just me, or is Disneyland super nice looking compared to other theme parks? It makes Knottsberry farm look like the state fair!

Water is pretty. We don't have any in the entire state of Arizona, so for us it's like getting a picture of a lunar eclipse.

Then, we went on the Mark Twain boat ride. I don’t think I’d actually ever been on this thing. It definitely wasn’t a thrilling ride or anything, but it was nice to see the sights.

We walked around a lot, explored the different areas and went into lots of the Main St. shops.

Steve told me to look classy. I think he forgot who he was with....

I want my house to have a moat. Hey Steve, can we please make that happen? I don't think the HOA will mind...

It's like this shirt was made with Steve in mind. I always tease him about being grumpy because we have such opposite personalities. Really, he's just reserved, but I kind of have the personality of a toddler with a caffiene problem.

Next up, it was time to hit up Thunder Mountain Railroad! Do you remember being a kid and thinking this ride was so awesome and scary because it went sideways?! That’s big thrills for D-land. And of course Steve assumed the purpose of rides were to give him photo opportunities. I was actually pretty impressed with the photos he got mid bumpy ride!

Steve loves stars and I still have the delusion that "I'm the greatest star" so this picture made total sense. I hope you just heard Barbara singing in your head too. Heather?

At this point the park was starting to get crowded, so we decided to hang out around downtown Disney for a bit before getting out of the area for dinner. Stay tuned for part 2…
