Gingerbread Pecan Butter & Gingerbread Smoothie

So I get excited for pretty much every holiday flavor, but gingerbread is the one I always go crazy with. Ginger molasses cookies, ginger molasses cake, gingerbread ALL THE THINGS!

Gingerbread Pecan Butter & Gingerbread Smoothie

Okay so first let’s chat about this gingerbread pecan butter. It’s been a while since I shared a new nut butter. I usually just stick to my normal salted almond butter or honey roasted peanut butter, but I wanted to try something a little different. I’ve made pecan butter once before and it turned out so amazing, so I was super excited to use it again with some ginger and molasses.   Gingerbread Pecan Butter: Smooth, and creamy roasted pecan butter with all the flavor of a classic ginger molasses cookie The result is so smooth, creamy and gingerbread-y! I tried to keep the sugar level down, so if you want more of a dessert spread, I suggest adding a little more brown sugar. This is pecan butter with a gingerbread flavor, not like a cookie butter or nutella type spread. I’ve been spreading it on my waffles with pumpkin butter, and let me tell you, that combo is pretty fantastic.   Gingerbread Pecan Butter: Smooth, and creamy roasted pecan butter with all the flavor of a classic ginger molasses cookie I also used it to make this gingerbread smoothie! Blenders are most commonly used for smoothies, even though the good ones, like this Blendtec Designer 725, can do so much more! I also used the Blendtec Twister Jar to make this pecan butter, and then used the Blendtec WildSide Jar to make this smoothie, but you can make soups, blend ice cream bases, grind nuts to make things like almond meal, and so much more! These two recipes are just the tip of the iceberg!   Gingerbread Smoothie: A healthy. protein-packed way to get your gingerbread fix! Okay, back to the smoothie. It is protein-packed without protein powder. I have a confession that will probably get me booted from all of my fitness friend circles, but I’m just not into protein powder. There was a time (a long time) where I used it because I thought I was “supposed to”, ya know, to be “healthy”, but I honestly just prefer to get my protein naturally in my diet, and I never seem to have a problem getting enough. In fact, getting enough anything when it comes to food has never been my problem, if ya know what I mean. 😉 Gingerbread Smoothie: A healthy. protein-packed way to get your gingerbread fix! Anyway, the smoothie, again, is not a dessert smoothie. It has a natural tartness from the Greek yogurt, and I wanted to use the sweetness from the banana with just a hint of molasses. Trust me, a little molasses goes a long way, so if you want a sweet smoothie, I recommend adding a little brown sugar. Otherwise, like the pecan butter, it is a healthy smoothie with gingerbread flavors, not like a gingerbread milkshake (which now I also want to make in my Blendtec 😉 ).

Yield: 2 cups pecan butter; 1 smoothie

Serving Size: 2 tablespoons pecan butter; 1 smoothie

Gingerbread Pecan Butter & Gingerbread Smoothie

Ingredients

    For the Gingerbread Pecan Butter:
  • 3 cups roasted pecans
  • 1 tablespoons molasses
  • 3 tablespoons brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • For the Gingerbread Smoothie:
  • 1 frozen banana
  • 1/2 cup nonfat vanilla Greek yogurt (or dairy-free alternative)
  • 1/3 cup unsweetened vanilla almond milk
  • big handful ice cubes
  • 1 tablespoon gingerbread pecan butter
  • 1/2 teaspoon molasses
  • 1/8 teaspoon ground cinnamon
  • 1/8 teaspoon ground ginger
  • 1/16 teaspoon ground cloves
  • 1/8 teaspoon almond extract (optional)

Instructions

    To make the Gingerbread Pecan Butter:
  1. Place roasted pecans in a high quality blender or food processor (such as Blendtec) and blend/process until smooth, about 3-5 minutes. Add molasses, brown sugar and spices and blend/process until smooth and combined. Store in an airtight container for 3-4 weeks at room temperature.
  2. To make the Gingerbread Smoothie:
  3. Place all ingredients in a high quality blender (such as Blendtec) and blend until smooth. Serve immediately.

I don’t know when I became 87 years old, but there is nothing I love more lately than a lazy Sunday. In fact, I won’t even make plans with people on Sunday anymore unless it involves them coming to my house, and even then, I’m ready for them to leave after an hour or two. It’s like I’m becoming an introvert, but only 1 day a week.

Also, have we discussed that my bedtime is approximately 8:30 pm? Three nights this week I was up past 10, and I was a zombie! I can’t do it. I seriously can’t wait for the weather to change so I can go back to getting up at some sort of normal hour, and then maybe I will only act 57 instead of 87. 😉

Anyway, this was the perfect recipe for a lazy Sunday. I literally had to do nothing but throw the ingredients in a bowl, and lightly toss it around. Then I spent a total of 10 minutes photographing it (again, WHO AM I??? I usually spend at least an hour), and left it out since my family was coming over for brunch. Ummm…it’s all gone. And I made a full on brunch. Even after eggs and waffles, they still kept reaching back into the bowl. It’s amazing how the simplest ideas can be the biggest crowd pleasers!

I have to admit, I was didn’t exactly get excited about this month’s theme of dehydrated foods for The Recipe ReDux. It’s just not something I really do, but I do loooove me some dried apple chips. In fact, I could snack on them all day long, so I threw this baby together in seconds, and it has instantly become a household favorite. Crunchy cinnamon almonds, Apple Cinnamon Chex (I’m obsessed with that stuff), pecans, apple chips and extra cinnamon–it’s the perfect, simple fall snack!

Ingredients

  • 2 cups Apple Cinnamon Chex
  • 1 cup dehydrated apple chips, broken into pieces
  • 1/2 cup cinnamon roasted almonds
  • 1/2 cup pecans (roasted or raw)
  • extra cinnamon, if desired

Instructions

  1. Gently toss all ingredients together in a large bowl and serve immediately. Leftovers may be stored in an airtight container for about 2 weeks.

Like many of you, I make pumpkin recipes year round. Pecans though? I feel like they are the forgotten stepchild of fall amazingness. Pumpkin, apples and cranberries take the spotlight while sweet and crunchy pecans are often forgotten, left on the sidelines.

Well not here, my friends. These scones may be loaded with pumpkin spice, but the real star is the ultra-soft pecan flour. The texture of these scones is like no other. The outside is just like a regular scone, but the inside is melt-in-your-mouth smooth. Not at all dry and crumbly like some scones can be.

Pecan flour isn’t exactly a common ingredient. At least, I’ve never seen it in the store, and until after making my own was a slightly annoying (but still totally worth it) task, I didn’t even know you could buy it. King Arthur sells it, and you can also look on Amazon. I made my own by grinding the pecans in my food processor, then lofts of sift, grind, repeat. I can’t say it was a quick process, but the result was so incredible that I would do it again in a heart beat!

Other than if you make your own pecan flour, they are ridiculously quick and easy to make. 1 bowl–no mixer–quick bake time–practically fool proof!

I dusted mine with a pumpkin spiced powdered sugar topping, but they are equally great without, or with some fresh whipped cream or whipped coconut cream for an extra treat. They also stay super soft for a few days, so you can make them ahead of time for company, or throw them together at the last minute. Either way, once you make them, they won’t last long!

Yield: 8 scones

Serving Size: 1 scone

Pumpkin Pecan Scones

Ultra-soft pumpkin spiced pecan flour scones are sure to be your new go-to fall treat! Vegan & gluten-free.

Ingredients

    For the scones:
  • 2 1/2 cups pecan flour
  • dash salt
  • 1 tsp baking soda
  • 1 tbsp corn starch
  • 1 tsp pumpkin pie spice
  • 2 tbsp pure maple syrup
  • 1/2 cup pumpkin puree
  • For the powdered sugar topping:
  • 2 tbsp powdered sugar
  • 1 tsp pumpkin pie spice

Instructions

  1. To make the scones, preheat oven to 350. Line a medium baking sheet with Silpat or parchment paper. Set aside.
  2. In a medium bowl, whisk together pecan flour, salt, baking soda, corn starch, and pumpkin pie spice. Add maple syrup and pumpkin puree. Mix until combined. Mixture will be slightly wet and sticky. If it is unmanageable, add more pecan flour 1 tablespoon at a time.
  3. Roll dough into a large ball and press down into a 1-1 1/2? thick disk. Cut into 8 equal pieces. Do not separate. Bake as if for 9-11 minutes until golden and set. Transfer to wire racks to cool completely.
  4. In a small bowl, whisk together powdered sugar topping. Lightly dust onto scones just before serving. Scones can be stored at room temperature in an airtight container for up to 5 days.
